1940s Cake Recipes – This is a recipe advertisement published in 1943 for Swans Down Cake Flour. This was during World War II, when certain food items were rationed, this ad features “egg-free” cake recipes.

Swans down! And what cakes. . . incredibly light. . . offer! No ordinary flour could give such results.

Mix the chocolate and milk in the top of the bain-marie and cook in boiling water quickly for 5 minutes, stirring occasionally. Mix with a rotary egg beater; costs. Sift the flour once, measure, add soda, salt and sugar and sift together three times. cream shortening; add flour mixture, vanilla and chocolate mixture, and stir until all flour is moistened. Then beat vigorously for 1 minute. Bake in two greased and lightly floured 8-inch layer pans in a moderate oven (375°F.) 20 minutes or until set.

Cocoa cake without egg. Replace chocolate with 1/4 cup Baker’s Breakfast Cocoa. Sift the cocoa with the dry ingredients and add the cold vanilla milk.

Orange glaze. Combine 1 1/2 cups sifted icing sugar, 1 1/2 teaspoons grated orange zest, 2 tablespoons lemon juice and a pinch of salt. Add 2 tablespoons hot melted butter or other shortening and beat vigorously 1 minute, adding more liquid if needed.

I’m going to make this cake for the nursing home where I work.. ca I replace white sugar and brown sugar with these recipes and make it out OK.LINDA

Sift the flour with the sugar, baking powder and salt. Stir shortening to soften. Add flour mixture, ¾ cup milk and vanilla. Mix until all the flour is moistened, then beat two minutes on medium speed. Add the eggs and the remaining ¼ cup of milk. Beat one more minute. Pour into two 9-inch layer pans lined with parchment paper. Bake at 350 degrees for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes in molds; remove from pans and let cool completely on wire racks.

Classic Chocolate Cake Recipe: How To Make It

This cake can also be baked in three 8-inch layer pans for 25-35 minutes, or in one 13-inch by 9-inch pan for 30-35 minutes. The batter can be spooned into 36 medium sized paper cups in muffin cups, filling them half full. Bake at 375 degrees for 20-25 minutes.

I’m looking for a recipe for Swans Down “Black Magic” cake flour. I pulled it out of a recipe pad in a store around 1950. My mom loved it, then the recipe was lost. (very sad)

The first group of ingredients is for the cake, the second for the frosting. To make the cake, combine the brown sugar, flour and salt in a large bowl. In a saucepan, combine hot water, butter or margarine and dark chocolate. Blend until smooth, more heat may be needed. Cool and add to the flour mixture. Separate eggs. Beat the yolks in the buttermilk. Add soda and vanilla. Combine buttermilk and first mixture. Beat egg whites separately and fold in last. Bake in a generously greased 9 x 13 inch pan at 350° for 30 to 35 minutes. While the cake is baking, mix the sugar and flour into the frosting ingredients in a saucepan. Add water and chocolate. Cook over medium heat, stirring constantly, until thickened. (The frosting doesn’t get really thick, just cook until clear and simmer 2-3 minutes.) Spread the frosting over the cake in the pan while both are still warm.

S Style Chiffon Cakes Back In Vogue

Preheat the oven to 325 F and prepare the chocolate mixture – chocolate squares, hot water, sugar and baking soda – and mix well.

1. In the first bowl, sift together the flour, sugar, baking powder and salt. Make a well in the dry ingredients and add the vegetable oil, egg yolks, water and vanilla extract. Beat until smooth. Easy with Wesson!

2. In a second bowl, put the 7-8 egg whites and the cream of tartar, and beat to stiff peaks – stiffer than for the meringue.

Gradually pour the oil batter over the beaten egg whites, gently incorporating them. DO NOT STIR. Divide the batter and add the chocolate mixture to 1 half of the cake mix. Alternately pour plain batter and chocolate batter into an ungreased 10-inch tube pan, about 4 inches deep.

3. Bake for 55 minutes at 325F, then increase to 350F (medium) for 10-15 minutes, or until top springs back slightly.

Take out the mold (cake) and turn it upside down, placing the tube on the neck of a bottle; let it hang, free from the table, until cool. Peel off the sides with a spatula; turn the pan upside down and bang the edge sharply on a table to loosen it.
