I’ve known there was a recipe for a 3-ingredient fruit cake for a while but never got around to trying it until now. I copied this from the radio last year! So it’s been on my ‘to do’ list for a while! It’s very similar to this Annabel Langbein recipe.

I rarely make delicious cakes. I just don’t find that they taste better. Eating too much ice cream can be unhealthy and very heavy on calories. However, I love a good cake. This fun retro recipe for a three-ingredient upside-down fruit salad cake is my latest invention. A variation on my 4-ingredient pineapple upside down cake, it takes me straight back to childhood and I love it.

This cake actually only uses three ingredients. You need a can of fruit cocktail (in syrup, not syrup), self-raising flour, and sugar. I just added a little extra water to increase the amount of liquid and give a nice cake.

You can use an 8″ / 20 cm square corner 8 x 6″ (20 x 15 cm) or a 7″ square corner.

Step 2 – Mix the flour and sugar together. Then add two tablespoons of fruit juice. The batter should be thick, but if necessary add a little more water to make it smoky.

Step 3 – Pour the batter over the fruit. Gently shake the cake pan from side to side to spread the frosting. Now immediately put the cake in the oven to bake for 35 minutes.

Step 4 – After 35 minutes, check if the cake is cooked. If it is ready, its head will be golden and springy. Use a toothpick to test – it should come out clean. If necessary, return the cake to the oven for 5 minutes before checking again.

Step 5 – Place an inverted wire cooling rack on top of the cake and carefully press it down. Gently loosen the cake crust from your fruit cocktail cake. Slowly and carefully peel off the parchment paper, using a knife if any fruit gets stuck.
