Powdered seasoning ingredients:
- 8 cloves of garlic
- 10 shallots
- 4 candlenuts
- 50 gr curly red chili
- 5 cm turmeric
- 2 cm ginger
- 4 cm galangal
- 1/2 tsp roasted coriander
- 1/2 tsp cumin toasted
- Oil to taste
Curry Ingredients:
- 500 gr beef, cut
- 2 bay leaves
- 2 sticks of lemon grass, crushed
- Turmeric leaves/curry leaves (optional)
- 5 pieces of lime leaves
- 1/2 nutmeg, crushed
- 2 grains of cloves
- 1 star star anise
- 3-5 cardamom grains
- 3-4 cm cinnamon
- 1/2 tamarind / tamarind (optional)
- 1.2 liters of water
- 200 ml thick instant coconut milk
- 1 tsp salt
- ⅓ tsp pepper
- 1-2 tsp beef broth / flavoring
- 1 tsp granulated sugar
Slice Ingredients:
- 150 gr beef has in, optional, cut
- 1 tbsp margarine
- 5 shallots, sliced
- ½ onion, sliced
- 1 red tomato, sliced
- 2 scallions, chopped
- 100 gr cabbage, sliced 1 tbsp sweet soy sauce
- ½ tbsp oyster sauce
- 7 bird’s eye chilies, sliced
How to make:
- Blend the shallots, garlic, candlenuts, turmeric, ginger, galangal, red curly chilies, coriander, cumin and a little oil until smooth.
- Sauté the ground spices until fragrant then add the lemon grass, bay leaves, lime leaves, nutmeg, cloves, star anise, cardamom, cinnamon and kandis acid, stir well.
- Add salt, pepper, seasoning, chopped ankle meat and water, presto for 30 minutes.
- Once soft, add coconut milk and sugar, stir well.
- Heat a frying pan, add margarine, stir then add onions and shallots, sauté until fragrant
- Add the meat, bird’s eye chilies, spring onions, stir well then add the cabbage, curry cooking water, sweet soy sauce, oyster sauce and spices to taste.
- Beef Tongseng is ready to be served
