Tis the season for proms, cookouts and summer BBQs. This month we are celebrating my son’s 18th birthday, his high school graduation, and my husband’s 50th (!!) at our house alone. These cases scream for page cake. Not as sweet as a double layer cake, but just like the holidays, sheet cakes are easy to freeze and decorate, easy to transport, easy to cut and serve, plus they feed a crowd. This delicious vanilla cake with cream cheese frosting is from my favorite cake book, The Perfect Cake by Nick Malgieri. It can also be made as a cupcake or topped with fruit to turn it into a flag cake.

Emma’s Goodies Cakes

In the bowl of an electric mixer fitted with the paddle attachment (or mixer), beat the butter and sugar on medium speed until light and fluffy, about 5 minutes.

Add half of the butter. Scrape down the sides and bottom of the bowl and add a third of the flour, followed by the remaining butter. Stir in the remaining flour.

Bake for 30-35 minutes, until the cake is lightly golden around the edges and a toothpick inserted into the center comes out clean. Place the cake on a wire rack to cool completely.

In the bowl of a stand mixer fitted with the paddle attachment (or stand mixer), combine the cream cheese, butter, vanilla, and salt. Mix on low speed until combined, then increase speed to medium-high and beat until aerated and light, about 2 minutes.

Perfect Pound Cake

Stop the mixer and add half of the confectioners’ sugar; mix on low to combine. Gradually add the rest of the sugar, keeping the speed low.

Once all the sugar is incorporated, increase the speed to medium and beat until fluffy, about 1 minute.

Once the cake is cool, use a butter knife or small offset spatula to frost the top of the cake.

The cake is best enjoyed fresh the day it is baked, but it will keep well for several days. Store in an airtight container (or tightly covered with plastic wrap) at room temperature.

Chocolate Lava Cake is amazingly delicious, but super quick and easy to make. You don’t need any special equipment – no mixer, just two bowls and a whisk. Unlike most lava cakes, this recipe does not require ramekins. I cut it down to fit your muffin tin just right!

The concept of this recipe has been around for a while, as chef Jean-Georges Vongerichten popularized lava cakes in the 1990s. I’m happy to report that the ingredients are simple (you probably already are) and the muffin method works like a charm.

This recipe makes two small lava cakes, perfect for two separate servings. They are rich enough to serve up to four people who want to share. I can never polish on my own.

I think it’s nice to sprinkle these cakes with a little powdered sugar to serve. For presentation bonus points, add a scoop of strawberry or vanilla ice cream and/or fresh fruit.

Can I make this recipe ahead of time? You can prepare your recipe up to a day ahead of step 6. Meanwhile, refrigerate the cans, but let them come to room temperature before baking.

Can I use ramekins instead? This recipe was developed for regular muffin tins, but I think you could make the lava cakes in smaller, four-ounce (about three-inch diameter) tins. I do not recommend using ramekins larger than this.

Can I double or triple the recipe? Yes. Several commenters reported success, but noted that their cakes needed an extra minute or two in the oven. Try to divide the batter between the muffin cups as evenly as possible. You can’t just flip the individual servings around on the plate like you would if you were making two. Turn them out onto a cutting board or pan and let them cool for a few minutes before carefully transferring them with a metal spatula.

What about the “undone” egg in the middle of the cake? Is it safe to eat? My understanding is that the interior of the lava cake is above 165 degrees Fahrenheit, which is a high enough temperature to eliminate any risk to the egg. You can check with a thermometer if you want.

What if my lava cake isn’t ready after 5 minutes? In my well-adjusted oven test, it was five minutes

If your oven is cooling, the cake will take a little longer. Pay attention to the illustrations in the recipe (bake the cakes until they rise from the pan but wobble a little in the middle) and if in doubt, check out my step-by-step pictures.

The Very Best Crumb Cake

Bake Time: If you’re using whole wheat or all-purpose flour (gluten-free) and prefer a tastier cake, the bake time is 4 minutes and 30 seconds. The cake will be a little more delicate, so I recommend trying it only after the 5-minute method of baking.

Special Dietary Note: I don’t believe this recipe can be made vegan or egg-free, as the egg creates a soufflé-like dessert. You can make the recipe dairy-free by using dairy-free butter, like Miyoko’s Creamery, or dairy-free chips, like Enjoy Life, but I haven’t verified it.
