Material

  • 1.5 liters of water
  • 1 kg catfish
  • 100 gr pineapple, cut into pieces
  • 3 red tomatoes, cut into pieces
  • 3 green tomatoes, cut into pieces
  • 8 bird’s eye chilies
  • 2 tbsp tamarind water
  • 1 tbsp sweet soy sauce
  • Granulated sugar to taste
  • 1 handful of basil leaves

Ground spices

  • 5 red chilies
  • 6 shallots
  • 1 segment of turmeric
  • Salt to taste
  • 1 tbsp shrimp paste

Whole Spices

  • 5 bay leaves
  • 1 segment of ginger, crushed
  • 1 galangal segment, crushed
  • 1 stick of lemongrass, crushed

How to make

  1. Clean the fish and cut into pieces according to taste.
  2. Saute the ground spices with a little oil. Add whole spices like ginger, galangal, bay leaves, and lemongrass. Sauté until fragrant.
  3. Boil the water until it boils, put the stir-fried spices into the boiled water.
  4. Add tomatoes, chilies, pineapple and catfish. Cook until the fish is cooked.
  5. Add tamarind water, sweet soy sauce and sugar. Cook until boiling. Add basil. Stir.
  6. If it is cooked, remove and turn off the heat.
  7. Pindang catfish pineapple is ready to be served.
