This weekend in several Facebook groups I came across questions about using a Bundt® pan for other cake recipes and converting recipes. You have my solemn promise that I will not turn into a 24/7 Bundt® Lady (1-800-BundtRk), but I wanted to write about this topic because it seems relevant to bakers. (Darcie shared a very helpful article on converting baking pan sizes last week.)

Bundt® recipes typically call for two sizes: 12 cups and 6 cups. Anniversary Bundt® holds 10 to 15 cups. Accordingly, this pan size will work for any recipe that calls for a 10- to 14-cup pan.

Six Cup Vanilla Pound Bundt Recipe

I recommend purchasing the Jubilee Bundt® (10-15 cup sizes) so you are ready for any size recipe with just an adjustment to the baking time. (10-cup recipes will require less baking time than 12 or 14-cup recipes). I love the 6 cup pans that I can use for vacation baking (I have two). I can bake two cakes with one 12 cup recipe and have one cake to give as a gift and one cake to eat.

Cook’s Illustrated tested three 9-inch round cakes – yellow, chocolate and carrot – and found that the cakes were a bit denser and needed extra baking time – a positive result.

I found a useful conversion chart at Comfortably Domestic, Joy of Baking shared some helpful tips, and King Arthur Flour also addressed this issue. For those looking to bake a Bundt® cake in regular pans, Kitchn offered this tip. Spruce shares some great tips on how to get the most out of your bakeware with details on specialty pans (see their chart below).

If you have a 14-cup recipe and only own a 10- to 12-cup pan, measure cake batter for the appropriate pan and bake the remaining batter as brownies (you’ll need to shorten the baking time because t using a 14-cup/pan recipe so check to see if done fifteen minutes before). Cookies usually take about 15 to 18 minutes to bake. Scaling recipes can be done, but I’d rather deal with cookies than math problems.

To check for doneness, the most accurate method is to use an instant-read thermometer (OKSO is a good product). However, the Thermapen is my favorite and can be bought from King Arthur and other bake shops. The Bundt® cake should register 210 degrees in the center of the cake to indicate doneness. The toothpick method is not reliable for a Bundt® cake.

Nordic Ware makes a special reusable Bundt® thermometer that turns red to indicate the cake is done. I ordered one of these thermometers and will test it when I get it and report back. This cake bakes in a 6-cup cake pan, but also makes 3 extra muffins if you use that size pan. This is probably the best pumpkin pie you’ll try this season because the recipe is based on ours

Canned Pumpkin – 100% pure pumpkin (not pie filling) is what you’ll need for this recipe. I know it’s hard to find, but you can also make your own homemade pumpkin puree.

Cheesecake Swirl Carrot Bundt Cake

Flour – All-purpose white flour is what, along with the ingredients, makes a fluffy pumpkin cake. I have not tested this recipe with other flours at this time.

Baking Soda – This helps the cake batter rise. Be sure to measure the teaspoon carefully. You’ll also want to make sure your baking soda is fresh.

Sugars – Granulated sugar and dark brown sugar work together to make this cake shine. Dark brown sugar adds color and a deeper flavor. While you can use light brown sugar, I prefer dark.

Oil – This recipe is butter-free and uses vegetable oil. I know many recipes allow for substitutions, but we only tried this recipe with canola and vegetable oil.

Mini Chocolate Bundt Cake Recipe

Spices- They are so key to properly flavoring this cake. You can use pumpkin spice if you have it on hand. Trader Joe’s is fantastic! Plus, if you don’t, you can easily make your own with nutmeg, cinnamon, cloves, and a little ginger.

There’s nothing worse than baking a cake only to have it come out of the pan just right. Through trial and error, I stopped relying on baking sprays and went back to the old-fashioned method of flour and shortening.

If your cake cracks a little, that’s okay too! Carefully place the broken pieces back together and consider frosting the cake with frosting or frosting. Some chocolate chips or drizzle on top can also distract from any imperfections.

Whisk all the dry ingredients together in a large bowl, then add the wet ingredients. Use a whisk to beat the ingredients or a mixer. A few small traces of flour are fine! If you overmix the dough, the cake will not be as soft.
