You see, there are 3-layer vanilla cakes, vanilla cupcakes, naked vanilla cake, single-layer vanilla cake (aka strawberry cake!), 6-inch vanilla cake, confetti cake, and even a white vanilla cake hybrid. Each of these recipes uses the same ingredients, only mixed and divided in different proportions.

That’s what we’re focusing on today. This is a pure and classic vanilla cake sheet with a soft, springy crumb and incredible sweet vanilla flavor. It’s the simple birthday cake you need and the buttery flavor you love. And let’s add a giant ball of fluff on top – otherwise known as whipped buttercream. This is dessert nostalgia at its best!

Steps To Convert A Cake Recipe Into Cupcakes

My vanilla cake recipe (the best I’ve ever had!) makes too much batter for a 9×13 inch quarter sheet cake, and not enough strawberry cake batter. My hybrid 2-layer vanilla/white cake is super light and fluffy, and while it’s the perfect amount for a 9×13-inch quarter sheet pan, it doesn’t have the same firm buttery crumb of traditional vanilla cake. For today’s recipe, I took what I love about these cakes and combined them in just the right amount of batter to fit in this classic sized pan.

First, let’s go through an in-depth tutorial on the blending method. (Reverse cream! You’ll love it.) Although this is a very simple recipe, I encourage you to read my tips before you begin.

Remember when I shared Tessa’s Lavender Raspberry Cake ? I just love her recipes! Before this cake, I had only used the reverse cream method a few times. I loved the texture of her cake, so I replicated it with my strawberry shortcake a little later. We will use the same method as today’s vanilla leaf cake recipe. Instead of starting with butter and sugar together like traditional cake recipes, the reverse creaming method starts with the dry ingredients and ends with the eggs. This method produces a lighter and tighter crumb with more spring. The slices are firm as a cake, but not dense in the slightest. It is velvety smooth and almost creamy in taste.

Sift the dry ingredients, including the sugar, into a bowl. Sifting through a fine mesh strainer is imperative because it aerates the dry ingredients and leaves the larger sugar crystals behind. Remember, we don’t cream sugar and butter together where the large sugar crystals usually break up. Next, mix room temperature butter, a little milk and vanilla extract. In this step, the butter coats the flour. The coating of fat minimizes the formation of gluten in the flour, which helps to have a finer cake crumb. You will taste the difference.

By the way, we flour with shortening when making cookies and pie crust. This practice helps produce an extra flaky (not dense) roast.

Success tip: Cut the butter when it’s cold. Smaller pieces of butter will warm to room temperature much faster than a full stick of butter. Plus, it’s easy to cube cold butter as opposed to room temperature butter.

After that, we will add the rest of the liquids including the rest of the milk, the cream and the eggs. The photo on the left (below) is our sheet cake batter. I promise it’s the creamiest batter you’ll ever work with. Avoid over mixing.

Use whatever 9×13 inch pan you have on hand. I usually lean towards a 9×13 inch glass pan simply because the cake looks so pretty served right off the plate. It’s what I go for when making cookies and cream cakes and yellow sheet cakes. If using a metal pan, keep a close eye on the cake. Metal pans usually mean a faster baking time, although my test recipes (in all different pans) finished baking in about the same time.

Whether you’re a novice baker or a pro, you’ll be happy to see that this vanilla puff pastry only requires a handful of super basic baking ingredients. Each one serves a purpose, and for best results, I don’t recommend making substitutions.

Elevating this vanilla leaf cake is a lovely blanket of whipped buttercream. Use the same ingredients as my regular vanilla buttercream recipe, but add extra heavy cream and beat for a few extra minutes. A little extra cream and a little extra whipped cream turn this frosting into a buttercream/whipped duo. This is the same frosting we use to fill our chocolate cream cupcakes. It’s very creamy and fluffy, like you borrowed a puffy cloud from the sky and dropped it on a cake. Talk about dreamy!

If you want to go the extra mile, top this beauty with thick and fluffy Swiss meringue buttercream. For a less sweet option, try my whipped cream. It’s a personal favorite!

Before we finish, let’s talk about turning this vanilla sheet cake into a flag cake. Spread 2/3 of the frosting all over the cake, reserving the remaining 1/3 for the piping detail. Take some fresh blueberries and halved strawberries and line them up to mimic the stars and stripes on an American flag. I used an Ateco 32 piping tip for the piping between the “stars” and an Ateco 844 piping tip for the piping between the “stripes”.
