This seared tuna recipe starts with a simple Asian-style marinade. The tuna chunks are then coated in sesame seeds and seared. Let’s break it down into easy steps.
Seared Ahi Tuna
To make: Stir together the marinade ingredients, then toss the tuna pieces to coat in the marinade. Marinade in the refrigerator for 30 minutes before cooking.
Note: If you don’t like raw fish and prefer it cooked on medium, fry it for 1-2 minutes on each side.
How long to cook: Over medium-high heat, pan seared ahi tuna squares take about 15-20 seconds per side, or 1 minute total.

Ahi tuna is almost always served raw in the middle, so it’s safest to use high-quality, sushi-grade (or grade 1) from a reputable vendor. The fish market or counter should be able to answer any questions you may have about the quality/source of your ahi tuna.
Technically, you can serve whole ahi tuna, but it will taste completely different from seared ahi tuna. Tuna that has been cooked all the way through is similar to canned tuna; Dry and flaky. Pan-seared is generally considered the best way to cook ahi tuna.
It is important to make sure your ahi tuna is not overcooked, as overcooking creates an unusual texture that is chewy and dry. For ahi tuna steaks that are at least 1 1/2 inches thick, we recommend searing on high heat for 1 1/2 minutes per side. For thinner tuna steaks, sear only 1 minute per side.

With a sushi chef for an uncle, I feel like I’ve been eating sushi my whole life! I still have faint memories of hanging out at my uncle’s restaurant, doing homework at the sushi bar after school until my mom was done. I think this is where my lifelong love for sushi and Japanese food came from. So one of my favorite dishes to make when I have people over in the summer is this sesame crusted tuna! It only takes 15 minutes to make, is hard to mess up, and guests have no idea so it’s always a hit!
Cooking raw fish can seem a bit intimidating but it’s easy if you know what kind of fish to get! The danger of eating fish raw is that you are not killing any parasites during the cooking process. So instead, fish need to be frozen and stored below -20°C for 7 days to kill all parasites. If you find fresh sashimi/sushi grade fish at the fish market, it has already been thawed so that it is ready to use immediately.
For this dish, I like to have Yellowfin (Ahi) Tuna Steak from Farm Boy, a local grocery store chain that started in Ottawa and recently expanded to Toronto! Minor digression – Farm Boy is the best grocery store, it’s like the Disneyland of grocery stores. They have many house brand items that are unique to Farm Boy and are great quality and really good value! Their frozen seafood is Good Catch certified and Farm Boy is literally the only grocery store where I can find tuna steaks and black cod. If you don’t have a Farm Boy near you, you can usually find tuna steaks packaged frozen in the same way at local fish markets.
If you’re using frozen tuna, make sure you’re not thawing it in the vacuum-sealed bag it came in. When fish is vacuum sealed, it removes all oxygen which is a great way to keep fish fresh. Frozen however, once you remove it from the freezer, there is a higher risk of botulism because the vacuum sealed package contains bacteria that thrive in an oxygen-free environment. The best way to thaw it is to remove it from the packaging and either wrap it in plastic or place it in an airtight container and defrost it in the fridge overnight. I place the tuna on a paper towel while thawing to absorb any liquid as you want your tuna to be dry when drying.

I like to serve this tuna with a simple soy ginger sauce of soy sauce, rice wine vinegar, sesame oil, wasabi and grated ginger. All of these ingredients should be easy to find in the international section of major grocery stores or in any Asian grocery store. I love using freshly ground ginger in this sauce because it adds a nice gingery kick that can be mimicked by pre-minced or powdered ginger. Ginger is usually sold in large chunks and it’s impossible for me to use it before it goes bad, so a handy tip, ginger stores really well in the freezer and you can peel it straight from the freezer. Can grate with!
For an extra fancy, restaurant style dish, I like to serve the slices topped with thinly sliced onions that have been quickly pickled in rice wine vinegar and chopped green onions. I use a vegetable peeler to get super thin slices, I wouldn’t recommend cutting the onions with a knife because if the onions are too thick, it will overpower the tuna.
And it is! Once you’ve perfected seared tuna, there are so many ways you can enjoy this dish! Have it on its own for a quick and healthy snack or try it my favorite way, on top of a pile of delicious sesame soba noodles.
