Ritz Cracker Appetizers You Can Make In 5 Minutes
Use readily available Baby Bella mushrooms for these hot canapés. White button mushrooms will also work, so whichever type of mushrooms you use, wash them and remove the black bits. White button mushrooms or baby bella mushrooms usually take up to 10 minutes to cook and are easy to saute.
Depending on the types of canapés you make, the type of cheese you use may vary. However, these hot canapés go well with Fiesta Blend (a Mexican cheese), Cheddar and Mozzarella cheese, or a melting cheese like Monterey Jack and Colby.
Avoid sharp and aged cheeses for this delicious mushroom filling. We were looking for a cheese that melts easily, melts smoothly and has a mild taste. I used Walmart’s Fiesta Blend Cheese, which is already shredded and ready to use.
For canapés, use a dense, chewy bread like a French baguette. French bread is usually a smaller loaf with a nice crisp crust. I like to bake my own French baguettes at home, but most grocery stores offer bakery-fresh baguettes or French bread that you can finish baking at home.

To make canapés ahead of time, make the filling ahead of time and do all the prep work at least 3 days in advance for best results. Store the filling in an airtight container and refrigerate until needed.
Meanwhile, slice French bread into 3/8″ – 1/2″ thick slices. Store the bread in a gallon size freezer bag and freeze overnight before baking. Thaw the breadcrumbs completely before assembling and baking the canapés.
Note: Freezing bread keeps it fresh and prevents it from going stale. A stale bread creates a drier and crisper loaf once baked.
Cooked canapés can be stored in the refrigerator for up to 3 days. Simply reheat in the microwave or revive the crispiness of the bread by reheating it in a 350°F oven for 5-8 minutes. Check out my instructions for making these canapés ahead of time.
