This puff pastry mushroom cake is a fabulous quick snack and perfect for entertaining. It’s quick to make and full of flavor. It is made from puff pastry, sautéed mushrooms seasoned with garlic, balsamic and thyme, sweet shallots and delicious Gruyere cheese. If you like mushrooms and cheese, you must try it!

Easy Puff Pastry Appetizer With Goat Cheese
STEP 1: Cut shallots, mushrooms, chop garlic. Don’t cut the mushrooms too thin, you want them to still be crispy after cooking.
STEP 2: First, cook the onion with butter and thyme until soft, then add the garlic. Transfer the onion to a plate.
STEP 3: Cook the mushrooms with oil over high heat for a minute without stirring. As soon as you stir the mushrooms they will release their liquid and will not brown. Then you have to cook the mushrooms with balsamic vinegar until all the liquid evaporates. Too much liquid in the mushrooms would cause the puff pastry to be soggy.
STEP 4: Return the onion and garlic to the pan and stir until combined. Season to taste with salt and pepper. Remove the pan from the heat and transfer the mushrooms to a plate, let them cool a little.

Do not put the hot mushrooms on the puff pastry – they will start to melt and become sticky and will not be puffed up as they should be after baking.
STEP 5: Take the puff pastry out of the fridge (take it out only if you have all the ingredients ready, warm puff pastry is sticky and difficult to work with).
Score the puff pastry around the edges leaving a 1 inch (2.5 cm) border. You don’t want to cut the dough all the way through, just score it with a stacking knife, this will help puff up the edge of the tart. Prick the dough a few times with a fork – this will help release steam from under the dough and prevent the dough from puffing up under the mushrooms.
Bake the cake at 375°F or 190°C for about 20-25 minutes. It is ready when it swells nicely and turns golden.
Onion Brie Appetizers Recipe: How To Make It
I like to serve this tart as an appetizer with a side of lettuce and tomato. It is quite rich, so you want to serve it with something light and crunchy. A crisp dry white wine would also be a lovely addition.
Make them differently: you can also cut the dough into small squares or circles and make small individual tartlets.
This mushroom tart is best freshly prepared (especially slightly warm) or 1-2 hours after baking. After this time, it will no longer be crispy and the pastry will become slightly moist. It’s still very tasty though! You can heat it in the microwave or in the oven until warm.
This tart can also be frozen. Wrap each portion in plastic wrap and freeze for up to 3 months. Melt in a 350°F (180°C) oven until melted and heated through.

How to make it in advance: Prepare the mushroom filling, grate the cheese and store them in the refrigerator for up to 3 days. Assemble and bake the tart just before serving.
