Balinese Betutu Duck recipe

But if you are curious to try it yourself without having to go to Bali, maybe the following recipe for Betutu Duck is suitable for trying at home.

Material:

  • 1 young duck (500-700 grams)
  • 2 limes
  • 1 tbsp salt

Whole seasoning:

  • 400 ml of water
  • 100 ml thick coconut milk
  • 5 pieces of lime leaves
  • 5 bay leaves
  • 2 tsp salt (to taste)
  • 1 tbsp sugar
  • 1 tsp broth powder

Grind seasoning:

  • 10 red chilies (remove some of the seeds)
  • 5 red bird’s eye chilies
  • 12 shallots
  • 6 cloves of garlic
  • 2 tsp grilled shrimp paste
  • 5 roasted hazelnuts
  • 1 tsp pepper
  • 1 tsp nutmeg
  • 2 tsp coriander
  • 3 cm of roasted turmeric
  • 2 cm kencur
  • 5 stalks of lemongrass, thinly sliced
  • 1 galangal segment
