I’ve written a lot over the years about how the best summer recipes are easy (see here, here or here). Because summer fruits, vegetables and herbs are such powerful ingredients, all you need is a little something extra – maybe a drizzle of olive oil and a pinch of salt – to create a delicious dish. Lately, I’ve been seeing burrata on restaurant menus in Chicago. Since cream cheese is such an easy and rich accent for summer produce, I couldn’t resist making my own burrata recipe.

Burrata Appetizer With Mediterranean Honey Herb Oil
If you’ve never heard of burrata, you’re in for a treat. It is a fresh Italian cheese made from cow’s milk. In the store, it looks a lot like fresh mozzarella because it’s in balls. In fact, each ball is a bag of fresh mozzarella filled with rich fresh cream. You can find burrata at specialty cheese shops or most grocery stores with a good cheese section. It goes well with both sweet and savory flavors, so I made this recipe with stone fruits, tomatoes, and fresh herbs.
Instead of whipping up a sauce, I make a simple infused oil for this recipe. It has a light lemon-thyme flavor that lets the creamy burrata and fresh produce shine. It’s easy to make – just mix 1/2 cup olive oil with crushed garlic cloves, 4 thyme sprigs, and the zest of 1 lemon, sliced into strips. Warm it over the stove and then let it steep while you prepare the other recipe ingredients. Strain the thyme, garlic and lemon before drizzling over the salad.
Along with the infused oil, I combine burrata from the summer produce market. This recipe is all about fruits and vegetables, so use the best you can find! Here’s what you need.
Pile everything on a platter with the burrata in the middle and drizzle generously with the lemon thyme oil. Serve with good crusty bread – I like baguette or sourdough. Then dig in, scooping in a bit of cheese with each bite!
