The Fluffy and Buttery Vanilla Cake recipe has been my most popular recipe on this site. I have received several questions on how to make chocolate chip cookies, so finally, here it is!

Classic Madeira Birthday Cake Recipe

This cake has a soft crumb but is firm enough to hold and carve. It’s not gross but it’s very moist and has a great chocolate flavor without being too sweet.

Because cocoa dissolves in hot water; it makes the cake full of delicious chocolate. I used the same method to make my favorite chocolate cake.

Overall, I think this chocolate cake is perfect to have in a baker’s back pocket. It’s perfect for any special occasion and any frosting will work with it!

Follow the same process as written in the recipe but you may need to adjust the cooking time. Remember that the time shown below is only a guide as not all harvesters are the same.

TIP: Since not all ovens are the same, always check your cake for a few minutes less than the baking time. You can tell when a cake is done when a cake tester or toothpick inserted in the center comes out clean.

You can also bake this in three 6×2 pans; if you do, don’t forget to adjust the cooking time.

Of course, two 6×3 pans yielded a tall cake, about 3 inches tall (before it was distressed and leveled). The cake rose to the top of the pan. Then I cut each cake in half, giving me four 6-inch pieces, as you can see in the pictures.

After torturing and layering the cakes, the height of my cake is about 4.5 inches. If I put frosting between the layers and the outside of the cake, the total height of the finished cake would be over five inches.

TIP: If you have a cake pan that is less than 3 inches in height, another option is to place parchment paper around the cake to add height, like I did in my Vanilla Cake.

You can also bake this in two 8×3 pans; the cooking time will be longer if you bake in a tall pan.

Using 8×2 pans, the oven will yield three 8-inch cakes that are about 2 inches in height (before the frosting and layering). The cake rose to the top of the pan.

I have three of these sizes but usually, I only cook with two.

These cake tins are 6 inches wide and 2 inches tall. When two baked loaves are put together with frosting, you will get a cake that is about three inches in most of these recipes. These usually fit nicely in my large Rubbermaid plastic container. Easy storage is another reason to like this size.

Unless otherwise noted, most 6-inch cupcakes bake at 350F for about 20 minutes or until a toothpick inserted in the center comes out clean. If you know your oven is hot, bake it at 325F for a long time. I can’t say how long it is, you just have to check after 20 minutes and do the toothpick test.

Also, don’t use convection for these mini cakes especially if you like nice circles. High temperatures combined with convection often result in controlled cakes. (It’s not a complete disaster because you can always cut the dome and eat the cake crumbs!)

Mini cheesecakes are another favorite! All you need is a 6-inch springform pan. I find the best way to make small cheesecakes like the Irish cream cheesecake above is in my Instant Pot. Instant Pot Cheesecakes are a no-brainer for me.

You will need 2-2.5 cups to make the basic frosting for these 6 inch cupcakes. This grill is only two sections about one inch long. Six other cake recipes you’ll come across are three-layer and require three cups of frosting. You will need additional frosting if you want to make more flowers or other decorations on top.

As you can see, the number of slices you get from this cake varies greatly with the amount of cake you eat. I find that I usually get 10-12 servings since no one in my family eats large portions. When wedding caterers cut round cakes, they tend to cut smaller pieces and can get up to 14 from a small six inch cake.
