Hi Jam Cake, you sweet thing you. I love this recipe first and foremost for its simple deliciousness — think a soft sugar cake with a swirl of jam and a crunchy crumb cake topping, and that’s it.

Easy Raspberry Swirl Pound Cake
I know, I know, but I gotta be me! One of my fridge doors has a section devoted to jams and jellies and preserves of all kinds, mainly because my Southern husband is a jam fanatic.
And inevitably there are different jars with different amounts at any one time, and when the fridge is full, it’s time to make jam cakes!
(Because you know I’m not going to allow jam with any part that doesn’t contain it. No, not even with fruit.)
Not that anyone is complaining, as jam cakes are a huge favorite in our house. And since I know you’re probably wondering, let me make one thing clear.
Blueberry Jam And Cream Cake
Jelly is a clear fruit spread made from fruit juice and sugar with some sort of thickener to help it gel.
Jam is a spread made from fruit juice, sugar and crushed or chopped fruit pieces.
Any of these items will work fine in this cake, although I like using jam best because there are small pieces of fruit.
And, you can even mix and match! I’ve used apricot with strawberry, raspberry with blueberry… and of course you can use just one flavor if you’re a purist.
Lemon Strawberry Jam Cake
Step 2: Mix 2 cups all purpose flour, 1/2 cup sugar, one tablespoon baking powder and ½ teaspoon salt. Put the flour in your food processor, add 1/3 cup of the butter, and process until it resembles fine crumbs.
Step 3: Put the flour butter mixture in a mixing bowl, add one egg and 1/4 cup milk and stir it until everything is well combined.
Step 4: Spoon batter into the prepared pan. Pour jam over batter, then swirl into batter with a knife. Pro tip: If you have a few different types of jam, this one works just as well! My current favorite combo is apricot and raspberry.

Southern Jam Cake With Caramel Icing Recipe
Before you start making this recipe, measure and prepare your ingredients so that the cooking process goes smoothly and smoothly.
Butter- Use unsalted butter for this recipe. Only butter will work for this recipe, not margarine, and not coconut oil. Margarine has a weird taste and can spoil the taste of this dessert.
Egg Whites – You will need 4 large egg whites for this recipe. Make sure your eggs are at room temperature.
Baking powder and baking soda- Baking powder and baking soda allow the cake to rise. Make sure your baking powder and baking soda haven’t expired.

Granulated Sugar – We like to use granulated sugar, also the most common sugar used in baking. Castor sugar will also work well.
Buttermilk – Gives extra moisture to the cake. If you do not have buttermilk, you can make your own buttermilk. Simply add one tablespoon of vinegar or lemon juice to one cup of milk and let it sit for at least 10 minutes.
Powdered Sugar – You will need powdered sugar for this recipe. You don’t need to buy powdered sugar, you can make it at home by simply mixing granulated sugar in a blender or food processor.

Jam And Cream Sponge
Step 2: In a large mixing bowl, add softened butter and sugar. Mix with an electric hand mixer until creamy and smooth, about 3 minutes.
Step 3: In a large measuring cup or a small mixing bowl, add buttermilk, egg whites, and sour cream and mix with a whisk.
Step 4: Then in a medium mixing bowl add all purpose flour, baking soda, salt and baking powder. mix with a whisk until combined.
Step 5: Pour ½ of the dry mixture and ½ of the wet mixture into a butter mixer and mix until it is almost combined.
Jam Filled Vanilla Layer Cake
Step 7: Divide the batter into 3 8-inch baking pans and bake in a preheated oven at 180c (350f) for about 25-30 minutes (depending on your oven) or until a toothpick inserted into the cake comes out clean.
In a large mixing bowl, add room temperature butter, powdered sugar, vanilla extract, and milk. Mix with an electric hand mixer for a few minutes until the buttercream is light in color and creamy.

Yes! You can bake this cake in a 9×13-inch sheet cake pan. Vary the baking time and keep an eye on the cake so that it cooks completely.
Our biggest tip is to use a scale and cake strips for even cake layers. Weigh out the chocolate cake batter and divide it into two equal pans. Then use cake strips to make sure your cake layers bake evenly and a dome doesn’t develop on top.

This cake will last up to 4 in the fridge. To prevent the cake from drying out, cover the cake with plastic wrap or foil. The taste of this cake is amazing the next day.
Freeze this cake in an airtight freezer-friendly container for up to 3 months after it is completely cooled; some people like this cake better after it is frozen.
Our tip is not to decorate or cover it with frosting, as this can ruin the decorations on the cake, we suggest freezing the cake and decorating it when you defrost it.
