Cake Recipe Quantity Calculator – This cake price guide has been a long time coming. I can’t begin to tell you how many times I’ve been asked how a cake costs.

Whenever I get this question, it takes me back to the beginning of my cake journey. When I sold my first cake, I had no idea how much a homemade, custom cake should cost.

Overtime I learned to value my time and effort, and began to recognize the kind of people I wanted to bake for. But I still charge less of my cake for the year!

The main reason I’m sharing this post is to help you evaluate the hours you put into your custom cakes and charge them the right price.

I want to use the formula below to calculate the cost of a custom cake. I use it for small custom cakes, rather than wedding cakes (which are usually priced by the number of servings).

It comes down to basic cost accounting, factoring in your direct and indirect costs. And of course, your time is valuable!

I want to highlight that this idea also applies to homemade cookies and cupcakes. It really works for any baked good that a home baker can make.

You are a cake artist, and you should consider how many hours you want to spend on a cake. If someone asks for an intricate cake topper or delicate sugar flowers, it should be built into the price.

And that’s where it gets difficult. Sometimes a client may ask for something you’ve never done before. You may have no idea how long it will take, or you may have to try to create something multiple times.

In situations like this, you just have to make your best guess and hope you’re close. Some cakes will take longer than expected, and some cakes will take less. I finally try to tell myself everything is average.

Another part that can be difficult to figure out is your hourly rate. The further along you are in your cake journey, the easier it will be to figure it out.

I know when I was first starting out, I felt grateful just getting the cake order. I was also not very experienced or confident in my skills. The thought of paying myself for every cake I made seemed crazy.

But you know what? If you work in a bakery you get paid hourly!! You should pay yourself at least minimum wage, even if you think you’re still learning.

You can also adjust your rate to take into account your experience and skills. You may start at a low rate, but you can increase your rate as your abilities develop over time.

Now to the second part of my equation, the cost of your ingredients! These are considered your direct expenses.

Direct costs include the ingredients you use to make each cake. It’s incredibly important that you track these, so you know how much it costs you to make a cake.

Most of us have a list of our go-to recipes (like my vanilla cake recipe), and calculating costs is actually quite easy with a bit of legwork.

This may be my inner CPA showing, but I created an Excel spreadsheet to help me quickly calculate the cost of each of my cakes. I know not everyone loves numbers as much as I do, but I think most bakers out there enjoy being organized and precise.

Creating a costing sheet is easier than you think, and once it’s created, the file does all the hard work for you.

But you don’t need to know how much salt is in a container. Need to know the price of a teaspoon, or the price of a cup of flour! In the next column I share an ideal portion size for each ingredient.

This is my first pricing file that I created in 2014. You can clearly see from the Love column that I was underpricing my cakes!!

This next step takes some time. You need to figure out how many servings of each ingredient are in a container or bag. For example, a small bag of granulated sugar contains about 8 cups of sugar.

I know it’s a ton of work, but it’s worth it. This helps you know how much money you are actually making from each cake sold.

Most of us home bakers don’t rent separate space, but I think almost all of us have invested in baking equipment!

Whether it’s an edible printer, or an airbrush, you should calculate the depreciation of those tools over their expected lifetime and add them to your overhead.

That way, you really include all the costs you have to make the cake. These types of costs can really add up, so it’s important to factor them into your pricing.

As I mentioned earlier, one of the biggest mistakes home bakers can make is trying to compete with grocery stores. I think we’ve all done it from time to time.

But the people who run to Walmart at the last minute to pick up a sheet cake are not the people who are contacting you weeks (or months) in advance to make a custom cake for someone special.

Grocery chains use cheap ingredients and bake in large quantities. You are using top of the line ingredients and creating special flavors and beautiful decorations.

In 2016 (when I still sold my cakes), my average rate for an 8-inch layer cake was \$100. I had more demand than I could handle, and people are willing to pay a pretty penny for custom things here in NYC.

And even then, people still told me I should charge more for my cake. It blew my mind.

People often spend \$100+ on a custom cake. Your rate should be high enough that it drives some people away. If no one tells you that you’re too expensive, you’re probably not charging enough.

If you’re not sure how much people in your area are willing to pay for a custom cake, it’s okay to ask around.

You can read up on prices in your area by contacting other custom bakers in your area. It’s a great way to network!

Just make sure you don’t try to undercut another local baker or cake shop. The cake community is small, and you want to support your fellow bakers.

If you only get one cake order because your rate is cheap, you might not get the clients you want. The type of person who shops for the cheapest custom cakes is usually not someone you want as a repeat customer. Trust me on that!

You can undervalue custom baking in your area if you set your price too low, which ultimately hurts everyone.

In reality, every cake maker has its own unique style and offerings. It may take some time to develop your style, but the more cakes you make, the more cake you’ll make.

I rarely work with fondant and whenever I get a request for a fondant intensive cake, I happily refer them to my other cake friends who specialize in these types of cakes.

Or if my cake schedule is fully booked, I’ll refer people to local bakers I know and respect.

They returned the favor when the same thing happened to them and it created a great relationship between all of us.

Another mistake I made in the beginning? I did not charge for delivery. I shudder to say it out loud.

Always charge a fee if someone wants to deliver the cake to you. You can choose a fixed rate for delivery within a certain radius, or you can charge based on distance.

Either way, be sure to factor in the cost of gas, wear and tear on your car, and the time it takes you to deliver the cake.
