With the introduction of the Bundt pan in Minnesota over 70 years ago, Bundt pie is as American as apple pie and much more versatile. From birthdays to anniversaries, promotions at work to graduation, we celebrate with a cake. Over the next 12 months, we’ll be sharing some of our favorite Bundt cakes with you – starting with this classic lemon Bundt cake.

Beat the butter, sugar, and salt together, first until combined, then until fluffy and light in color. To see what the process should look like, check out our video on how to cream butter and sugar.

Add one egg at a time, beating well after each addition. Scrape the sides and bottom of the bowl after adding all the eggs and beat briefly to combine the residue.

Measure out the flour by gently spooning it into the cup, then sweeping up the excess. Sprinkle the baking powder into the flour. Add the flour mixture to the dough in three parts, alternating with the milk, starting and ending with the flour. After adding milk, the dough may look slightly curdled. All right; it will become smoother with the addition of flour.

Stir until everything is well combined; the dough may look a little rough, but should not have any large lumps.

Grease a 10- to 12-cup Bundt pan thoroughly, making sure all nooks and crannies are covered. If your pan is more complex than most, it’s worth taking the time to melt the shortening and spread it over the inside of the pan with a pastry brush.

Why didn’t we prepare the mold before starting, at the same time as we started preheating the oven? Because here in the test kitchen, we discovered that Bundt non-stick pans can “shed off” non-stick spray into the pan, allowing it to collect at the bottom of the pan – especially if the pan itself is non-stick. Preparing the pan just before use keeps the non-stick spray exactly where it needs to be: between the pan and the cake.

Bake the cake for 45 to 60 minutes or until a cake tester or toothpick inserted into the center comes out clean.

Tip: If you don’t have a toothpick long enough to reach the center of the cake, use a piece of uncooked spaghetti.

A pan with a dark interior will bake the cake faster; start checking after 40 minutes. Dough baked with Gluten Free Measure for Measure flour will bake slightly slower; give him the full 60 minutes.

Mix lemon juice and sugar. Heat briefly in the microwave or on a burner, stirring to dissolve the sugar. You don’t want to boil the lemon juice, so microwave until very warm but not obnoxiously hot – less than 1 minute should be enough. Set the glaze aside.

Remove the cake from the oven and carefully run a knife between the cake and the pan around the edge. Place the pan upside down on a cooling rack. If the cake falls out of the pan onto the rack, remove the pan. If the cake does not fall onto the rack, let it rest for 5 minutes, then carefully lift the baking sheet off the cake. But if the dough still seems to stick, give it another 5 minutes upside down, then very gently shake the pan back and forth to loosen it and remove it.

Brush the glaze all over the hot cake, both on top and sides. Let it sink in then apply more glaze, continuing until all of the glaze is used up.

Stir in sugar and salt, then stir in 2 tablespoons of lemon juice, adding just enough extra juice to create a thick glaze that barely spills.

I used to think gluten-free baking was very intimidating, but there are so many great gluten-free flour mixes out there these days!

If you hadn’t told me this cake was gluten free, I would have had no idea. The texture and taste are just like regular vanilla cake! !

There are many gluten-free flour mixes. Each brand uses a unique blend of wheat flour alternatives, such as rice flour, brown rice flour, and even almond flour.

It can be difficult to get a gluten-free flour texture suitable for baking. Many of these alternative flours are finer in texture than all-purpose flour.

Typically, some type of starch is added to give the mix better structure and some binding strength. Tapioca and potato starches are the most commonly used starches.

Another ingredient in gluten-free flour that may sound a bit odd is xanthan gum. It is a key ingredient in gluten-free baking. Xanthan gum also has a major impact on the texture of gluten-free baked goods.

Gluten adds elasticity and stickiness to cakes and stuffings. Xanthan gum mimics these characteristics in gluten-free baked goods and helps retain moisture.

Luckily for us, xanthan gum is included in almost all gluten-free flour blends (including the brands below).

I’ve tried this recipe with several different brands of gluten-free flour, and so far each has worked great:

My favorite brand of gluten-free flour for this recipe was King Arthur. However, any brand of gluten-free flour you can find at the grocery store should work.

My only word of caution is to make sure you use some kind of gluten-free flour mix.

Using one type of gluten-free flour, such as almond flour or cassava flour, in this recipe will not produce the same results!

Most grocery stores offer at least one gluten-free flour blend. Stores like Whole Foods or Trader Joe’s also have lots of great options.

If all else fails, Amazon is another easy way to get gluten-free flour mix. I order most of my baking items on Amazon, including most of my specialty ingredients.
