For Brooks’ recipe, you’ll need cake ingredients and buttercream frosting ingredients, but there will be significant overlap. So, in total, you’ll need 1 ¼ cups room temperature butter, ¾ cup granulated sugar, three large eggs, 3 teaspoons vanilla extract, 1 ⅓ cup all-purpose flour, 1 ½ teaspoons baking powder, 1. ½ cups powdered sugar, and 1 to 2 A spoonful of milk.

Begin the preparation process by preheating the oven to 350 F. Then, line a 2-pound loaf tin with a loaf tin liner or parchment paper. Add the eggs one at a time, beating to combine after each.

Transfer the mixture to your prepared tin and bake for 40 to 45 minutes, or until a skewer inserted into the center of the cake comes out clean. Let the cake cool in the tin for about 10 minutes, then transfer it to a wire rack to cool completely.

Add remaining ½ cup butter and remaining teaspoon vanilla extract to a large mixing bowl. Beat with an electric hand whisk until smooth. Slowly sift in powdered sugar about ¼ cup at a time, beating after each addition. If the icing starts to get a little too dry, mix in the powdered sugar and add a splash of milk. The final texture should be a smooth frosting that is spreadable but will hold its shape. If it is too thick, add more milk. If it is too runny, add more powdered sugar.

Spread the frosting over the top of the cooled cake. Top with a few sprinkles, if desired, then you’re ready to enjoy a sweet little treat.
