Not stacking your cake layers and spreading frosting on each one.” Baking in a loaf pan means an extra few minutes in the oven compared to cupcakes or 9-inch rounds, but you “just have one loaf that you can spread the frosting straight on!” And in those extra few minutes, you’ll have time to make a fresh pot of your favorite coffee, which perfectly complements the sweetness of this cake.
Cake Recipes Loaf
For Brooks’ recipe, you’ll need cake ingredients and buttercream frosting ingredients, but there will be significant overlap. So, in total, you’ll need 1 ¼ cups room temperature butter, ¾ cup granulated sugar, three large eggs, 3 teaspoons vanilla extract, 1 ⅓ cup all-purpose flour, 1 ½ teaspoons baking powder, 1. ½ cups powdered sugar, and 1 to 2 A spoonful of milk.

Begin the preparation process by preheating the oven to 350 F. Then, line a 2-pound loaf tin with a loaf tin liner or parchment paper. In the bowl of an electric stand mixer, beat ¾ cup butter and all of the granulated sugar until smooth and fluffy — this should take about four minutes. Then add 2 teaspoons of vanilla extract. Add the eggs one at a time, beating to combine after each.
Sift in the flour and baking powder (Brooks cleverly uses a wooden spoon strainer, which does the job nicely) and gently fold the mixture into the wet ingredients, making a dough with a wooden spoon.
Transfer the mixture to your prepared tin and bake for 40 to 45 minutes, or until a skewer inserted into the center of the cake comes out clean. Let the cake cool in the tin for about 10 minutes, then transfer it to a wire rack to cool completely.
Add remaining ½ cup butter and remaining teaspoon vanilla extract to a large mixing bowl. Beat with an electric hand whisk until smooth. Slowly sift in powdered sugar about ¼ cup at a time, beating after each addition. If the icing starts to get a little too dry, mix in the powdered sugar and add a splash of milk. The final texture should be a smooth frosting that is spreadable but will hold its shape. If it is too thick, add more milk. If it is too runny, add more powdered sugar.

Spread the frosting over the top of the cooled cake. Top with a few sprinkles, if desired, then you’re ready to enjoy a sweet little treat.

Double Chocolate Loaf Cake
Measure the flour, sugar and baking powder into a mixing bowl and stir to combine. Add the remaining ingredients – butter, eggs and vanilla bean paste and beat on low speed using an electric hand mixer (or stand mixer).
Once the ingredients are combined, increase speed, partially scraping the bottom and sides of your bowl. Easy Pay!!
Spoon the batter into a 450g (1lb) loaf tin (I use a loaf tin liner for ease) and level. Bake for 50 minutes (or up to an hour) until the cake is well risen and springy to the touch. A skewer inserted in the center should come out clean.
Serve plain when slightly cooled or completely cooled with frosting and lots of sprinkles!
