The secret ingredient in this cake is baby food. I know it sounds weird, but it adds a lot of moisture and you don’t have any bits of carrot in the cake. To make a cake from scratch, combine flour, sugar, baking soda, cinnamon, salt, vanilla, eggs, butter, and baby food. Mix well with a hand mixer and pour into three cake pans and bake. While the cakes are cooling, make the cream cheese frosting. Mix the soft cream cheese, butter, powdered sugar and vanilla. Mix with a hand mixer until light and fluffy. When the cakes are cool, frost them with frosting and top the cake with chopped pecans, if desired.
