When the cake first comes out of the pan, it resembles a pound cake. The crumb is firm. The interior is light-colored, and the exterior is bronze.

If you don’t normally buy buttermilk, you can substitute 1 cup of milk and 1 tablespoon of white vinegar or lemon juice.

Be sure to use at least 2% milk (whole milk is even better). Mix both together and leave for 5 minutes, then use as directed.

A super soft, super moist, deliciously buttery, golden cake that you can literally put together in 10 minutes (use time). The glaze is also very easy and quick. It’s a silky, no-mixer vanilla buttercream that’s dusted with a crunchy, candied coconut-almond topping. From start to finish, this cake is ready in less than an hour.

As described in Webster’s (wannabe) definition above, the second layer is an incredibly fresh, crunchy, candied almond-coconut topping. How do you “scent” almonds and coconut? easy! Just combine the two and mix with a little melted butter and honey. The mixture goes into the oven for 10 minutes and becomes golden, crispy and beautiful as a picture!

Buttermilk is one of the secret ingredients in this buttery crisp cake (and in many other baked goods). I’d go so far as to say it’s almost magical. What does buttermilk do in cakes and other baked goods? Fine Cooking explains it this way:

“Buttermilk owes its success as a baking ingredient to its acidity. Of course, it’s not nearly as acidic as lemon juice or vinegar, but the milder lactic acid in buttermilk makes it a real asset to bakers. The slightly sour dough helps keep baked goods it’s moist and soft as it breaks down the long, stringy strands of gluten; it also keeps cherries and walnuts from turning blue in cupcakes. The astringency of buttermilk adds a nice, subtle touch to cakes and pastries. And the acid is responsible for buttermilk’s thick consistency, which adds a soft, rich, creamy quality to everything you bake.”

No buttermilk? No problem! There are other ingredients that work similarly to buttermilk. If you have plain yogurt, Greek yogurt, or sour cream, these will all work as substitutes, as they all have that sour quality that works to keep baked goods moist and tender. Just thin them out with a little milk to make them a similar consistency to buttermilk. And if you don’t have any of the above, you’re still fine. You can make your own (artificial) buttermilk substitute!

It’s easy to make your own buttermilk substitute. Simply add 1 tablespoon of vinegar or lemon juice to a measuring cup. Fill it all the way to the one-cup mark with whole milk and let it sit for 10 minutes. Voila! You got “sour milk” with similar properties. Use it as directed in recipes that call for buttermilk. It will provide the acid for rising and help create a tender crumb. The resulting flavor may have a more subtle flavor than buttermilk, but it sure works!
