This recipe is perfect for two 8-inch cake pans or three 6-inch pans. However, it can be scaled up for larger pans. I use this site as a guide when scaling recipes up or down.

I like to use Homemade Cake Release on my pans and line them with parchment paper for perfect cakes every time.
I also use baking strips around the sides of my cake pans to make sure the cakes bake perfectly flat and don’t need any trimming (no cake scraps!).
If you want the cake to be extra moist (or if you’re worried about overbaking), you can add some simple syrup to the cooled cake layers. I recommend cutting off the top crust a bit first so that the syrup really soaks into the pies.

It was literally one of my first posts years ago, I posted this ready-to-eat cake mix recipe. It’s a boxed cake mix with a few ingredients added to make a delicious cake straight from the bakery.

15.25oz Box Cake Mix – I’ve tried this recipe so many times using regular cake mix and pudding cake mix. DO NOT USE PUDDING CAKE MIX. Below is a picture to see the difference. You want a regular cake mix without the pudding. I like the Betty Crocker brand, but feel free to use whatever brand you like or the cheapest one. Just make sure there is NO PUDDING IN THE CAKE MIX.
The added pudding made the cake too moist, so it didn’t rise as it should have in the middle. Just stick with your regular cake mix and with the added ingredients it tastes so amazing and moist you won’t even miss that pudding 🙂

Sour Cream – This is what gives the cake its rich texture and provides so much moisture. It also softens the sweetness of the cake, which I think is a good thing because you usually end up with a thick, sweet frosting on the cake, so I like a soft cake. Please use normal, full-fat sour cream, I’m afraid that the cream will contain too much water, which will affect the result of the cake.
Whole Milk – I always use whole milk over skim milk in my baking recipes because it adds fat and makes the cake moister. I know you may be tempted to use whatever milk you have, but just know that yes, using other milks will work, but for best results, stick to the whole milk in the recipe.
Oil – I keep canola oil in the pantry, so that’s what I use. Feel free to use vegetable oil, a blend of oils, or even avocado or olive oil. Just be aware that avocado and olive oils have a flavor (or maybe it’s just me) so it can change the flavor of the cake. If you use them, be sure to buy extra virgin olive oil with a light flavor.
I prefer the Betty Crocker Super Moist box cake mixes. Use any you like, but make sure the cake doesn’t have pudding mix added to it. The front of the box will specifically say “pudding in the mix”.
