But on the subject of this recipe post: Peanut butter lovers – this is definitely THE cake for you!
It is good? Oh, that’s good. So good it comes with a warning label: This peanut butter cake is so rich. Like if you eat it all in one sitting, you might have a heart attack. And we really don’t want that to happen. So eat in moderation.
I created this cake by request from Elizabeth via Make a Request! link. She asked me if I would make a peanut butter cake that was “moist, nutty and delicious,” like the kind she enjoyed from her childhood. I have no more information than that to go on. Layer or layer cake? Frosting or glaze? Moist or goopey powder? So many options. At first I was thinking along the lines of a peanut butter layer cake with a warm honey glaze drizzled on top and allowed to seep into the cake, creating a very moist and slightly goopey texture. Then maybe even add a layer of peanut butter frosting on top. I might still be able to create it. In the end I settled on a more traditional version: Peanut butter layer cake with a rich peanut butter frosting. I chose oil instead of butter because oil makes the cake nice and moist while butter tends to dry it out. Buttermilk also works wonders to create a soft, moist powder. So we have both here!
Note: If you want to cut calories (and save a little work), bake the cake in a 9X13 cake pan as a sheet cake and make half the amount of frosting to put on top (the “death factor” in this cake is mainly in the frosting).

Add the flour and buttermilk alternately, beating until combined. Do not beat too much or the cake will be dense and dry. It’s okay if there are a few lumps of flour.
Grease a 9×3 inch round pan and pour the batter inside. (I used 9×3 – 9×2 inch brass would work too). I use a handmade aluminum pan by Magic Line, made in the USA.

Bake in a preheated oven at 350 degrees F for about 30 minutes or until a toothpick inserted into the center comes out “moist” – not wet with batter, but moist. Be careful not to over bake or the cake will dry out.
Leave the cake in the pan for 5 minutes before turning it out onto a wire rack to cool completely. Cut the cake in half.
Add powdered sugar one cup at a time. Add the heavy cream a little at a time until the frosting becomes a spreadable consistency. Note: This is a fairly stiff frosting. Be sure to store it at room temperature or it will harden even more.
Place the top layer on top. Ignore the picture. I accidentally misplaced it and I don’t want to try and pick it up again. The top layer of the cake should be placed upside down so that the top edge does not tilt down.

But I mention this because you might decide to add Nutella – it’s a delicious option.

To reduce calories (and save a little work), bake the cake in a 9X13 cake pan as a sheet cake and make half the amount of frosting to put on top. Also, for a more moist and goopey version, prepare a sheet cake. In a small saucepan bring 1/4 cup honey, 1/4 cup brown sugar and 2 tablespoons butter to a boil. Remove from heat. Poke a few holes all over the sheet cake and drizzle the honey glaze evenly over it. Let cool completely and then freeze (remember, half the recipe amount for frosting). Note, I haven’t actually tried this version, just conceptualized it in my mind, but I think it would work 😉 Note: For the chocolate frosting, add a few tablespoons of good quality cocoa powder. *Variation: Add Nutella to the frosting *Another variation: Drizzle some chocolate ganache on top for ultra decadence!

Sometimes you just need to bake some of your food first. Maybe you’re throwing a big shindig and you can’t do everything at the last minute. It will take about 4-5 hours to freeze. Once frozen double wrap in plastic wrap with a layer of aluminum foil on top of the wrap. Freeze for up to 3 months. When ready to thaw place in the refrigerator for about 24 hours. Carefully remove the wrapper without pressing the top of the cake. Remember not to stack anything on top of it in the fridge.
