This awesome rainbow delight has been on my site for a few years and I’ve made a few minor updates in that time. This used to be a great candy birthday cake recipe. In fact, it was ranked #1 (of 9) in Pancake Princess’s Best Sprinkle Flatbread, and came in a close second in Kitchn’s Funfetti Cake Bake. But with 3 small updates, the cake is now bigger.

“This cake was very tasty. It had a nice light texture but was still super moist. The vanilla flavor was bold without being overpowering and the cake was sweet without being overwhelming. I loved how easy the frosting was to make and appreciated how smoothly it went on the cake. My only criticism is that you have to beat the egg whites in a separate bowl, so it’s a bit tedious, but that’s the only negative I can think of.”

After years of experimenting with cake recipes, I’m more confident than ever in this updated version. The cake is very similar to my vanilla cake, but uses a little less sugar because we add sweet stems.

Here is the mixture of butter, sugar and oil. First you will mix the butter and sugar together, then you will mix it into the oil. The mixture will be creamy and mostly smooth.

Divide batter between 3 9-inch cookie sheets. If necessary, you can press the cake batter into 3 8-inch cookie sheets, but be sure to extend the baking time as indicated in the recipe. Always line your round pans with parchment paper rounds before adding the batter. Cool the baked cakes in the cookie sheets for 20 minutes, then remove the hot cakes and place them on a wire rack to cool completely.

Chocolate Chip Cookie Layer Cake

I’ve been baking in cake and cupcake batters for years and have learned exactly which sprinkles work and which don’t. I am happy to share my best tips.

I use the same frosting as my 3-layer vanilla cake, but add a bit more vanilla. It’s basically my vanilla buttercream recipe, only scaled up enough to yield enough for a layer cake. If you prefer chocolate frosting, use the chocolate frosting from my piñata cake recipe. (That’s enough for a cake this size.)

Can I paint this ice? Yes Feel free to add gel food coloring to the frosting to change the color.

Because it is so moist, the candy cake may be a little crumbly when you decorate it. I recommend applying a thin crumb coat, which is a layer of frosting, to the outside of the cake to catch the crumbs. The frosting recipe below includes just enough frosting for that thin crisp coat, then another thin layer of frosting over that. Note that I applied a slightly thicker frosting layer in the video below. It doesn’t matter either way; you’ll just have more or less frosting for that final frosting layer.

Flourless Chocolate Cake (with Mocha Whipped Cream)

Use a flat spatula to spread over the frosting. Icing spatulas are handy if you frequently decorate cakes and cupcakes. You can then run a bench scraper down the sides of the cake to smooth out the frosting coat as well as the top layer of frosting. You can watch me use both in the video tutorial below.

The vanilla layer cake is topped with rainbow sprinkles and finished with sweet vanilla frosting. Cake pictured is 9 inches; for thicker cakes, use 8-inch pans. Review the recipe notes and start bringing all the ingredients to room temperature.

To summarize, make sure you cream the butter and sugar together properly, all your ingredients are at the same temperature, and you use egg whites, sour cream, and cake flour. The result is an extremely light cake with a buttery vanilla flavor like the kind you find in a bakery or box mix. But everything is made from scratch in your own kitchen.♥

While the cake batter ingredients leave no room for substitution, we can have fun with a variety of frostings and cookies. But I encourage you to play around with chocolate buttercream, rainbow chips, or chocolate cream cheese frosting. For a lighter, less sweet version, I like to pair this cake with whipped cream (pictured below). Each of these frostings are absolutely stunning on this beautiful cake. The vanilla frosting gives a lot, so expect a thick layer between the cakes.
