Add this One Pound Cake to the list of ways to use butter. In fact, this cake rivals my all-time favorite Classic Pound Cake. There’s a reason butter appears in many baking recipes. It not only adds flavor to the butter, but it also affects the texture of the cooked food. The sweetness of the butter helps to soften the gluten, which in turn results in a smoother, softer dough.

I hate wasting ingredients, so I always have a hard time with butter. I usually can’t get a half-gallon of oil filled unless I make a concerted effort. That’s where the homemade butter recipe comes in!

To make butter at home, just add 1 tablespoon of white vinegar or fresh lemon juice to 1 cup of milk. Let the mixture stand for 10 minutes at room temperature. That’s it. While this method doesn’t produce quite the same cultured oil as you get from the store, it’s close enough for recipe purposes. (Technically, this method creates a “klub” or thickened buttermilk as opposed to sour milk.)

Another idea? Powdered oil. I discovered this product years ago when I was taking professional baking classes. This thing is amazing! You simply mix the powder with water and oil *boom*. It’s similar to powdered milk…only with a fattening. I always keep a container of butter powder in the back of my fridge. It lasts a long time once it’s opened (refrigerated), and that means I always have butter on hand for various recipes. Easy peasy!

As mentioned above, the use of butter in this Bun Pound Cake results in a moist and tender cake. Don’t ignore the pickleball, though! I personally love the sour ball of pound cakes, and my son Robbie followed in my footsteps. I gave him a piece of this pound cake for dessert, and he immediately ate the sour ball first. I can’t blame him!

Besides the taste, one of my favorite things about pound cakes is how versatile they are. I enjoy a slice on its own, but take a thin slice, heat it up in the microwave and then top it off with a scoop of vanilla ice cream and fresh berries? Here. It is true that there is something beautiful! I promise your friends and family will pray more!

Leftover pound cake can be stored in an airtight container at room temperature for up to 5 days. Let the cake cool completely before putting it in the container. Pound cakes can also be frozen. Just wrap the remaining portion (or individual portions) in plastic wrap and place them in a freezer bag. Freeze for up to 3 months. (For moistness, just let the cake sit at room temperature for an hour or two.)
