This vanilla cake is the result of combining Japanese sponge cake and western butter-based cakes. It combines the very soft, fluffy cream and Japanese baking method of Japanese cakes with the world-renowned, buttery goodness and sweetness of Western cakes.

But it’s more sturdy than Japanese cakes that are so delicate, they can really only be decorated with cream. Any heavy and bottom layer gets squashed!

More importantly, this cake includes my cake shelf life requirements to stay completely fresh for at least 2 days after it is made. (It lasts for 4 days perfectly.) Because who breaks the cake on the day it’s meant to be eaten??

Interestingly, baking connoisseurs will recognize the methods and ingredients in this cake as similar to the American hot milk cake—surprisingly, it is often described as a “thick” cake, possibly because they don’t preserve the egg yolks. I stress as much and do it because sometimes it bakes in a bundt pan which takes longer to break (= thicker cake).

The words “best served on the day” on a cocktail are not a good sign – it means it goes bad overnight. But this cake recipe is perfect for 4 days – even 5 days!

Making really good cakes starts with “creaming butter and sugar until fluffy…” It’s really hard for you to think Butter needs to be at the right temperature, and you can’t have cold mixing bowls

There is more room for error with cookies and other types of baked goods But the butter temperature must be suitable for cakes and cupcakes (17°C / 63°F is the ideal temperature for “soft butter”).

My Favorite Vanilla Cake Recipe

Heads Up – With this lengthy step by step explanation post, those new to baking should make sure they’re armed with everything they need to make this cake perfectly, first time and every time!

Finding the perfect cake is hard because there’s nothing to hide behind, it’s the purest form of baking And the “cream butter and sugar” step is the biggest factor, setting up the cake for success or failure from the start (read above).

A stand mixer makes this vanilla cake a breeze to make, although it can also be made with a handheld electric beater. It takes time to beat the eggs to make a nice fluffy cake, this recipe is more fail proof than the usual “cream butter”. and until the sugar becomes fluffy” recipe – read the box above for why

1. Beat the eggs and sugar – beat the eggs with the sugar for 7 minutes until thick and glossy, it changes color from yolk to white and has tripled in volume (over double the depth in the bowl).

At the very least you will expel the air Just follow my timing and beat speed and you can’t go wrong!

After 5 minutes of beating, the egg-sugar mixture will triple in volume (double the height in the mixing bowl).

2. Gradually add the flour – whisk together the flour, baking powder and salt Then add 3 eggs to the mixture, mixing on medium speed 1 for just 5 seconds. It should make dough

3. Heat melted butter in milk – use the microwave or oven to heat the milk until it melts. Believe it or not, HOT milk helps with aeration in this cake I doubted it, so I tried it with cold melted butter in milk and found it didn’t rise either.

Another technique used in some types of Japanese sponge cake is the use of hot milk with melted butter in the cake batter (such as Chopstick Chronicles, a Japanese food blog). Interestingly, I recently discovered it is also used in a traditional Southern cake called Hot Milk Cake.

4. Add some flour to the hot milk – this serves two purposes: a) bring the temperature of the hot milk down so that it doesn’t “cook” the eggs (i.e. the temperature); and b) it lightens the thickness of the hot milk (see above – it becomes frothy) so it comes together quickly when added to the rest of the beaten egg mixture.

Butter melted in warm milk infuses this cake with a nice subtle buttery flavor without the greasy patty that comes with butter cakes.

5. Slowly pour the milk mixture into the beaten eggs on speed 20 seconds, scraping down the sides of the bowl, then mix on speed 1 for 10 seconds – the batter should now be smooth;

7. Drop the large air bubbles 3 times into the cake pan on the counter This will not affect the cake-rising bubbles created in step 1

If you don’t, you may end up with 6 or more large bubbles on the surface of the cake that turn brown, and more invisible large pockets in the crust. If you’re eating ice, surface defects don’t really matter But if you’re not frosting the cake (eg just dusting with icing sugar/powdered sugar), you might want to be careful.

8. Bake for 30 minutes until golden brown and a toothpick inserted in the center comes out clean. The cake will have a slight dome but will flatten out after cooling

You can see the center of the left cake in the photo above, as you can see faint cracks in the surface If your oven doesn’t distribute heat evenly (my left front is hotter). But don’t worry—once the cake cools and flattens slightly, the cracks will disappear.

9. Turn cake upside down on cooling rack (so you have neat, straight layers in a layer cake). If you don’t mind a slightly domed surface / want to show off a particularly nice golden brown surface (eg if making a cake dusted with icing sugar/powdered sugar, or a glaze), then cool it right side up; And

10. Decorate! Serve cold with your favorite frosting, creamy, smoky with fresh berries, swirled with chocolate fudge frosting or simply dusted with icing sugar and a dollop of yogurt or cream!

The photos below are my attempt to show you how incredible the cake still looks four days after it was made! If it’s dry like a normal butter cake that starts with “cream butter and sugar until fluffy,” it crumbles when I knead it, and it won’t spring back.
