Remember when cauliflower was underrated? I swear, ten years ago, the only place I ever saw cauliflower was on the side of a sad and boring vegetable plate. Fast forward a few years and cauliflower is now everywhere!

I mean everywhere! Cauliflower is now used to make pizza crust. It is used as a substitute for chicken wings, and it is also used as rice. Is there anything this miracle vegetable can’t do?

I have to be honest, as a chicken wing fanatic, I had the cauliflower version and they were phenomenal. So I knew I could use cauliflower instead of chicken to create a healthier, vegetarian option for chicken bites/nuggets.

Are you ready for this, dear reader? These things are out of this world! Cauliflower is baked just perfectly. It’s soft, but not mushy. The panko is crunchy, satisfying those crunch cravings we all have.

And of course there’s the buttermilk sriracha batter to dip the cauliflower in before baking! It comes together and the result is a bite of roasted cauliflower that you will make again and again. I swear!

As you can see from the photos, the cauliflower bites are very close and even in size. There is an easy way to do this and I will walk you through it. I wish I had photographed the process, but I didn’t, so I’ll have to rely on my own words.

First, remove the core and leaves. Discard them. To do this, turn the cauliflower upside down so that the core is facing up. Use a paring knife to cut around the perimeter of the core, allowing large chunks of cauliflower to fall out.

Once you have removed the core, you can start cutting the larger flower pieces. Again, we’ll work from the bottom – trunks facing up. Using the same knife, carefully cut off the smaller stems. This will create flowers.

If the florets are still too large, instead of cutting the stems again, hold the floret in your hand and cut down the center of the stems until you reach the floret head. Now, lower the knife and pull out the stems to create florets.

Continue this process until they are equal in size. I never cut off the top of the cauliflower. First, it makes a mess when all those little buds fall off and come off. And secondly, I don’t care much for flat sides unless I’m roasting or roasting cauliflower steaks.

No. If you want to prepare the cauliflower and dough and let the cauliflower soak in the dough for a while, that will be fine. However, no longer than 30 minutes. And it is not at all necessary to do so.

Crispy Cauliflower Bites (a.k.a. Cauliflower Wings)

In my recipes, I rarely indicate that fruits and vegetables should be washed. I just assume everyone already knows that. You will need to wash the cauliflower, but for the dough to stick well, you will need to dry it as much as possible.

It’s really quite simple. After you cut the cauliflower and rinse it well under cold running water, put it in the salad spinner and the water will come right out of it.

I have a bit of OCD (some people might say I have a lot!), so I like to dab each flower with paper towels.

Yes and no. Yes, you can reheat leftovers – if there are any! Place them on a baking sheet and preheat the oven to 350 degrees. Bake for 10 minutes or until heated through.

I should also mention that this recipe can easily be doubled if you need more than just one head of cauliflower. Also, if you want a browner, more crispy cauliflower, you can put them under the broiler for a few minutes. The ones you see in the photos were not placed under the broiler.
