Cauliflower Cheese Main Course Recipe – This easy cauliflower cheese recipe is a side dish full of flavor with a creamy cheese sauce, made from scratch and baked to perfection. The sauce is whipped up in just 5 minutes and is prepared in the traditional way with a mixture of mixture (butter and flour). It’s one of my favorite side dishes to serve with any meal, and it’s especially good with a Sunday roast.

This simple recipe for cauliflower cheese is one of those hero side dishes that always goes well with any other main dish. Whether you’re whipping up a roast beef joint for dinner or lovingly slathering your Sunday roast chicken, this delicious recipe won’t let you down.

It is also excellent served with steaks and ale pies or other popular classic roasts such as roast potatoes, mashed potatoes, potatoes in foil, almonds from green beans and Yorkshire pudding.

Cheese Baked Cauliflower

Cheese: The simplest cheese sauce uses cheddar and I used medium cheddar here. But you can replace it with other types of cheese for different tastes. Try red Leicester, mozzarella or blue cheese if you like strong flavors.

A roux is basically melted butter and flour mixed into a paste. This paste is the starting point for making the cheese sauce. Many recipes say to use equal amounts of butter and flour, but I prefer to use slightly less butter to get a thicker mixture and to prevent excess butter from forming on top of the finished sauce.

Cauliflower cheese can become watery if the cauliflower is overcooked. Overcooked cauliflower releases water that will seep into the rest of the dish. So even if your sauce was thick when it went into the oven, the water from the cauliflower will cause it to become watery if it sits there too long.

I advise you not to bake for more than 20-25 minutes. If the top isn’t brown enough by this point, take it out of the oven and place it under the grill for 1-2 minutes.

Easy Roasted Cauliflower Recipe

Yes, you can make this recipe right up until it’s ready to go in the oven. Allow to cool at this point, then cover and refrigerate until ready to bake.

This recipe can be reheated if stored properly. Make sure all leftovers are completely cooled, then cover and refrigerate. When ready to reheat, remove from the fridge, remove the lid and reheat in the oven for 5-10 minutes or in the microwave for 2-3 minutes until hot.

Cauliflower cheese is best frozen before baking. Make the recipe to the extent that you would normally put it in the oven. Then leave to cool completely, cover with a lid or cling film and freeze for up to 3 months. Thaw completely overnight before baking them for 20 minutes at 180 degrees C.

You can also remove the pan from the heat if necessary if you feel it is too hot or if you cannot stir fast enough to prevent lumps from forming.

Preventing the sauce from forming a skin: Once the sauce is ready and removed from the heat, it will begin to cool immediately. During this process, a skin will begin to form on top of the sauce. This may happen before you have a chance to pour it over the cauliflower. To prevent this, place a piece of cling film directly on the surface of the sauce as soon as you remove it from the heat. When ready to use, remove the cling film and use a spoon to scrape any sauce off the cling film and return it to the pan.
