Easy Roasted Cauliflower Recipe

I’m so excited because today’s recipe combines two of my favorite weapons: harissa and tahini! Together, these two create a top with a beautiful balance of sweetness and spice. If you follow me on Instagram, be sure to check out today’s post too for a fun giveaway!

If you’re new here, tahini is my favorite seed butter that can add a nutty depth to both sweet and savory recipes. In this sauce, tahini combines with honey and lemon to create a bright, toasty, deliciously sweet sauce. The creaminess of the tahini makes for the most dreamy drizzles, and this sauce is incredibly versatile.

When it comes to brands, Soom is definitely the one for its smooth texture and rich nutty flavor. It really is the perfect pairing for this cauliflower tahini recipe.

You can freeze this Broccoli and Cauliflower Gratin if you want to make it ahead of time or just save leftovers. I wouldn’t recommend it as something to freeze, as it will change the texture of the broccoli and cauliflower, but it’s definitely doable. Cover the dish and freeze as in a casserole. Then let it thaw in the fridge and bake when you’re ready to eat.

Baked raw cauliflower turns into a caramelized golden treat. If you grill it with just olive oil, salt and pepper, it’s a delicious snack. This roasted cauliflower recipe is the perfect simple side dish for fall and winter meals.

You can also use basic cauliflower to add a roasted, flavorful flavor to other vegetable dishes, like my lentil tacos and farro salad. It’s neutral enough that it doesn’t overpower other flavors, so it goes well with a variety of cuisines.

As much as I love basic roasted cauliflower, it’s the perfect vehicle for creative flavors. This week I came up with three fun flavor combinations inspired by Italian, Mexican and Indian cuisines. I can’t decide which one I love the most! In the recipe below, you’ll find options for regular roasted cauliflower and my simple variations.

For optimal results, we want to cut the cauliflower into bite-sized pieces with lots of flat edges. The flat sides will be placed against the pan, allowing them to caramelize. Caramelization equals flavor, and we want as much of it as possible.

First, cut off the stem end of the cauliflower to form a flat base. Turn the cauliflower on the cutting board to rest on the domed side. Cut down to cut into four equal wedges. Trim only the inner areas to remove tough, fibrous stems. Then cut each piece into 1/2-inch-wide slices. Cut off flowers that are stuck together. It will all make sense as you do it – it’s easy!

Like all vegetables, cauliflower needs some breathing space in the pan. Otherwise, the florets will generate so much steam that they will never get crisp on the edges. It is better to use two pans, placed on separate racks near the middle of the oven, than to overcrowd one pan.
