1. Whisk in the eggs, salt, pepper and mushroom stock.
2. Add the spinach and cheese to the egg mixture. Stir well.
3. Heat the Teflon. Melt the butter.
4. Pour the omelette mixture.
5. After the edges of the omelette are slightly dry, turn and cook until evenly cooked. Lift and serve.
