One of my favorite ways to use sun-dried tomatoes is to add them to pasta dishes. This 5 Minute Ravioli Sauce, which uses sun-dried tomato pesto, is consistently in the top 5 most popular recipes.
Another favorite is roasted Parmesan broccoli with garlic and sun-dried tomatoes. Everyone will fall in love with this flavorful vegetable dish.
An old Italian lady gave me the recipe for this sun-dried tomato pasta on one of our trips to Italy. She gave it to me along with a jar of the best sun-dried tomatoes I’ve ever tasted.
I’ve tweaked it a bit by adding chicken to make it a more practical one pan dinner that my family loves.

If I’m being completely honest with you, there’s no need to add chicken breast to this recipe for sun-dried tomato spaghetti. It is delicious and satisfying even when served without meat.
How to enjoy it in Italy is how an Italian eats. Chicken is never added to the pasta but is enjoyed as a separate course that follows immediately after the pasta course.
You can use either type in this recipe. What you use is a matter of preference and accessibility. Whatever you do, use the best quality you can find because the flavor of this dish depends a lot on this ingredient.
Minute Lemony Pasta With Grilled Chicken Recipe
If you use sun-dried tomatoes packed in oil, reduce the olive oil in step 3 of the recipe or omit it completely so that your pasta does not become too oily and, therefore, heavy. I often only use 1 tsp of the oil that the sun-dried tomatoes are packed in as it only enhances the flavor.
If you are using dry packed sun-dried tomatoes, continue with the recipe as written. I personally prefer my sun-dried tomatoes packed dry. This way I can control the amount of oil. That being said, I recommend taking a close look at your packed dried tomatoes.
If they are too dry, they may need to be soaked in hot water for 5 minutes before cooking. If they have a pruney texture, they like to go as they are. No re-making is necessary for this pasta recipe.
The process for this spaghetti dish is simple and straightforward. Slice two chicken breasts lengthwise, season with salt and pepper and fry on both sides until golden. Put aside.
Sweet Chili Chicken & Noodle Bowl
Cook sun-dried tomatoes briefly in olive oil with sliced garlic, chilli flakes and fresh flat leaf parsley until fragrant but careful. Sun-dried tomatoes and garlic burn quickly, so use low heat and pay close attention.
Then add cooked spaghetti to some pasta water and sprinkle with salt. Top with sliced chicken breasts. Done!

The Pasta: Swap out the fettuccine noodles for spaghetti or linguine, or a smaller pasta like rotini or farfalle. Using smaller pasta would cut your cooking time by 5-10 minutes.
The Cheese: You could also swap out the sharp cheddar for something milder like jack or mozzarella cheese. Adding parmesan cheese would be great! Or you could even leave the cheese out altogether.
The Vegetables: Stir in some peas or steamed broccoli for the last few minutes, before adding the cheese.
