Step 1: Heat the oil in a pan over medium heat, then add the onion, garlic and mushrooms and cook for 6-7 minutes until soft and brown.
Step 3: Add the chickpeas and cook for another 5-10 minutes until thoroughly heated and slightly crispy and brown. Season with salt and pepper if needed and serve!
Quick tip: Sprinkle chickpeas with chopped fresh herbs like parsley, then squeeze in some lime juice for extra flavor.

There’s always time for another vegan curry recipe and this vegan chickpea curry is a bag of chips (translation: divine!).
I made this inspired by vegan lentil curry and it will be a regular rotation in my house from now on.
A perfect blend of spices and flavors in a super creamy sauce. But the best part is that it’s ready in less than 30 minutes and is virtually fail-safe!
It’s the perfect meal to make on a weeknight when you don’t have a lot of time but want to eat something really tasty.
Easy Vegan Chickpea Curry

Canned chickpeas. We used two 15 oz cans of chickpeas to make this recipe really quick and easy. If you want to use cooked chickpeas (not canned), you only need 3 cups.
Easy Vegetarian Chickpea Gyros
Coconut Milk. We used canned, full-fat, unsweetened coconut milk, which provides creaminess without overpowering the other flavors.
It also freezes well for up to 3 months. Thaw overnight in the refrigerator, then reheat in the microwave.
