If you’ve been reading for a while, you know that I am sometimes stubborn about doing things “the right way”. There is also a time and place to cook dinner and fast food.

This is the famous Hershey’s Chocolate Cake recipe that I tried at the recommendation of Michelle from Brown Eyed Baker (one of my first go-to places to hunt for baked goods). I tried it without too high expectations, because I thought “how much better can this be than the usual, such a simple recipe?”

I like to be proven wrong when it comes to food. In fact, it’s so wrong that even though I used the recipe many times, I went back to where I started and used the recipe exactly as it was written.

I really think this may be the only recipe on my entire website that I publish from another source without changing the ingredients at all. It doesn’t make sense! But for me, it’s perfect as it is. I can’t see myself using another recipe for Chocolate Cake every day, either.

It’s surprisingly quick to make the batter, with all the ingredients combined in one bowl using a whisk.

There is no need to have butter cream like the usual recipes because this one is made with oil which is the reason why this cake is moist. 🙌🏻 (Also means this is more forgiving than most, as you’ve accidentally left it in the oven for 15 minutes longer than needed and it still didn’t dry out).

Inch Chocolate Cake Recipe

I’m posting this recipe as part of the Easter Recipes posted yesterday! Instead, it is made for Easter. The same cake pictured above, same frosting, topped with speckled Easter eggs, chicks (both from Woolworths Australia), and a chocolate basket. I have given instructions in the recipe details of how I made the chocolate basket (hint – it includes a balloon…).

Easter aside, I call this my everyday Chocolate cake because it’s just that – my favorite for any occasion. There will be occasions that call for a fudge cake like Fudge Cakemade with cocoa powder and melted chocolate. There will be times when you want a very dark chocolate cake. There will be times when you will need/want a cake like Flourless Chocolate Cake. And there will be times you follow a light-as-air, crumbled chiffon cake.

This is for all those times when you just want a good old Chocolate Cake. Which in my world, is 80% of the time!

Black Magic Chocolate Cake With Best White Icing

Recipe VIDEO above. This is an everyday Chocolate Cake that I make regularly. The crumb is soft and moist, it really tastes like chocolate (more rare than you might think!) and you only need one bowl and a whisk. It’s Hershey’s famous “Perfectly Chocolate” Cake, one of the few recipes I’ve used from another source with no changes to the ingredients at all (yes, Perfect!)

1. Sugar – I use caster/superfine infrequently for all baking recipes, but it’s always fine.

2. Regular cocoa powder works well here, but Dutch processing will make the chocolate even sweeter. I use regular for this cake.

3. SPRINGFORM PAN(important): Even the best ones don’t come out 100% so with thin batters like this cake, you will get a little leakage. The best way to combat this is to “plug” the area where the sides meet the center with butter, and place a tray in the bottom of the oven to catch the drips (don’t put the cake pans on the tray, it touches heat circulation. ).

Moist Chocolate Cake

A quick way to make cake liners for the base: take a baking sheet and fold it in half, then fold it, then continue to fold it into a small long triangle. Mark the tip and center of the cake pan, then cut the edge of the cake pan. Unfold and voila! A near perfect cake game that fits your pan perfectly!

4. BAKING / SHELVING – If your oven is large enough to fit two cake pans on one shelf, place a rack in the middle of the oven. If it’s not big enough, place one shelf 1/3 of the way down the oven, then the next shelf below it (check to make sure the cake pan fits). If the cakes are on separate shelves, remove the top one at 35 minutes per recipe, then move the bottom one to the top shelf and bake for another 5 minutes.

5. I turn the cakes upside down so that the flat center becomes the surface used for frosting. A flat surface looks better when cutting a cake! This cake comes out of a good shape, but if you want to be extra neat, feel free to slice the cakes using a serrated knife.

6. EASTER DECORATIONS as pictured in the Easter Recipes post: $2 chicks, dark chocolate eggs and parchment paper all from Woolies. The chocolate basket is made as follows: blow up the balloon to the size you want the basket to be, place it in a rice bowl or something that fits inside it. Melt the baking chocolate in the microwave (about 1/2 cup chips). then transfer to a small ziplock bag. Pinch off the corner, then pour the chocolate over the exposed half of the balloon. Place it in the refrigerator, then carefully release the air from the balloon. See! Chocolate basket! Fill with shredded paper, eggs and chicks. (PS. Want a non-choc cake? 7. STORAGE: Keeps in an airtight container for up to 5 days, still nice and moist. Refrigerate if it’s cold and hot where you are. Cold is ideal because it is a moist cake that makes the crumb a little wet while still looking like a cake, when you eat it the texture is almost like a chocolate pudding cake. It’s still delicious, just not as cakey as it should be.

8. DIFFERENT COUNTRIES, DIFFERENT MEASUREMENTS – This recipe will work in cup measurements whether you are in Australia, the US, Canada or anywhere else in the world (except Japan, please use the measurements provided).

Measuring cups in the US and Canada is slightly different than the rest of the world, including Australia. Although for many recipes, the difference is not enough to affect the result of the recipe, for baking recipes, it can mean the difference between success or an epic fail. I always try my cakes and pastries using Australia (worldwide) and US copies to make sure it works for both. Usually it’s fine, like this Chocolate Cake (either the recipe has enough flex and/or the difference has to do with the ingredients).
