This will probably become one of your dinner recipes because it’s so easy to make and yet tastes so delicious! I mean, who doesn’t love to dive into a big bowl of pasta?

My whole family loves this recipe and I love how quick it is, plus it’s one of those recipes that we all agree on. Instead of complaining about what’s for dinner, the kids are demanding it!

Perfect Chow Mein Every Time Easy Stir Fried Noodles Recipe (豉油皇炒面)

I like the classic veggie mix here, but you can definitely swap in something you may already have like bean sprouts, mushrooms, peppers, snow peas, or water chestnuts.

Don’t worry that the finished dish will taste like oysters from the sauce, it just adds a nice depth of flavor to it.

When I don’t have one in my fridge, I used hoisin sauce in its place. So if you insist on skipping them, go for Hoisin. They taste very different, but both add a rich, delicious flavor.

We ordered Chinese take away from one of my favorite places. And all I really wanted was a huge bowl of chow mein with stir-fried noodles with perfect crispiness and crunch.

Except Ben says to me, “I think you want lo mein.” I hesitated. I was 99% sure it was chow mein I was looking for. He said, “Doesn’t the ‘chow’ in chow mein mean rice?”

I should have just stopped listening to him right there. Instead I ordered the Lo Mein and didn’t get my crispy noodles. And someone slept on the couch that night.

So in case you are all wondering, this is the main difference between chow mein and lo mein. Chow mein noodles are fried until crispy, while lo mein noodles are cooked soft.

After that mix-up, I tried to perfect a homemade chow mein dish. You know, so I don’t have to keep arguing with Ben about chow mein versus lo mein.

Lo and behold, I think I have it. This recipe here is created with the most perfect Hong Kong-style fried noodle crispy noodles.

These can be found at your local Asian grocery store and are usually sold pre-cooked so they can be used straight from the bag and into the pan without first cooking them, giving them that amazingly crispy firmness with soft, chewy spots.

But if you can’t find them or they’re not available, don’t worry. Fettuccine, linguine, or even ramen noodles (with the seasoning package discarded) make handy substitutes! A great chow mein comes down to the sauce, which is made with soy sauce, oyster sauce, sesame oil, sugar, and cornstarch to thicken it. Smooth pasta with the savory sauce is pasta heaven! One of my favorite noodles, on a par with all-time great Pad Thai, Pad See Ew, and Singapore noodles.

I want to say that chow mein is my favorite pasta kid, but I’m worried I said that in another recipe (or two… or three… 😂).

After all, there is a tough noodle competition in this big wide world. Pad Thai, Pad See Ew (Thai pan noodles), Singapore Noodles, Yakisoba (Japanese noodles) – just to name a few.

But Chow Mein is right up there, and not just because it’s noodle-slurping, but because:

The thing that sets chow mein apart from other fried noodles is the type of noodles used. Chow mein noodles are thin, frizzy-looking noodles that are lightly coated in flour.

Easy Chicken Chow Mein Recipe

Here’s a close-up of the noodles. The supermarket version of Fantastic Noodles is a little yellower than it should be, but just as delicious.

Use ramen noodles or other instant noodles – just season the packet! Or use thin spaghetti or other thin egg pasta (check the ingredients on the packet, there should be an egg listed).

Aside from noodles, chow mein almost always has cabbage, bean sprouts, and carrots, then your choice of protein. I’m pretty sure chicken is by far the most popular, but I don’t have any facts or figures to back that up. 😉

I like to use chicken drumsticks for stir-fries because they’re juicier than breast and fillet. When I make this with chicken breasts, I always tenderize it using baking soda (bi-carb), using Chinese restaurant technique. It’s super easy, see instructions here: How to Velvet Chicken.

Takeaway Style Chow Mein

Here’s what you need for the sauce. Chinese cooking wine is the key ingredient that makes home cooking truly rival take-out – your local Chinese restaurant uses Chinese cooking wine in practically everything!!

The difference is in the noodles. Both are wheat noodles made with egg so they are yellow(ish). Lo Mein noodles come out of the packet moist and oily, then boiled or soaked until tender before being tossed with a sauce, vegetables and egg whites.

Chow mein noodles are thinner and come out of the package a bit dry and crumbly (see photo above). They can be used to craft the following:

Here’s how it’s done. Make sure you have everything ready to throw in, because once you start cooking you’ll have it set up in just over 5 minutes –

Chicken Chow Mein

It’s totally fine to cook chow mein in a pan instead of a wok. Just make sure to use a big one – so your noodles don’t fly when you toss enthusiastically!

The fact is, no matter what protein you use, veggies, and even pasta you use, you’ll end up with a bowl of slurp-worthy noodles as long as you use the sauce recipe plus the same amount of noodles + other things (veggies, protein, etc.), so that the taste is not diluted.

So don’t commit too much to the exact type of pasta! Focus on the sauce. The sauce, the sauce!! – Nagi x

1. Chicken – I prefer to make it with thighs because it’s juicier, but it can also be made with breast or fillet. If you use breast you can tenderize it the Chinese way so it’s super tender and juicy like you get in Chinese restaurants – see How to Tenderize Chicken Chinese Style (Velveting)

Other Proteins: Add to sliced ​​pork, beef, or turkey, whole shrimp/shrimp, or even ground beef (still marinate, crumble into pieces, and cook that way).

2. Chow Mein noodles are sold in Asian grocery stores and also at Woolworths in Australia (Fantastic Noodles Brand, refrigerated section). See the post for photos and description.

3. Cabbage – I use any kind of kale, bok choy or savoy cabbage etc. I even use red cabbage! Once cooked you can hardly tell the difference in taste/texture.

4. Soy Sauce – This recipe calls for regular all-purpose soy sauce OR light soy sauce. All-purpose soy sauce just says “soy sauce” on the label, light soy sauce is labeled as such. I use Kikkoman. Do not use dark or sweet soy sauce. Tamari is a suitable gluten-free substitute.

5. Chinese Cooking Wine – also known as Shaosing / Shaoxing Wine. Essential to Chinese cooking, it’s key to making home cooking truly restaurant-tasting. Now available in supermarkets in Australia – Asian gear!

Beef Chow Mein

Substitute: mirin (reduce the sugar to 1 tsp) or dry sherry. If you really can’t use alcohol, use chicken broth/broth in the sauce instead of the Chinese cooking wine AND substitute chicken broth for the water.
