Since I posted my vegan queso recipe two months ago I’ve been slowly working my way through this mac and cheese. For the first time, I tried using pasta cooking water instead of my secret queso ingredient (mashed potatoes), and it was fine.

Then I brought back the potato, and potato starch makes this cashew-based queso super silky and creamy. It’s remarkable!

Nutritional yeast is essential, in addition to mashed potatoes. It provides cheese flavor and color. Frontier Co-Op started offering it in smaller bottles, and after using it in this recipe, I really think their product is better. It has less funk than the regular store-bought brand, so if you haven’t enjoyed nutritional yeast in the past, give it a try.

I kept adjusting the quantities and spices until we had the right amount of sauce for half a kilo of pasta. I finally nailed it. Don’t be intimidated by the ingredient list – it’s all the basic ingredients!

I couldn’t resist adding some broccoli for added flavor, color and health benefits. Keep it in or leave it out – I’ve included directions for both options in the recipe below.

However, if you don’t have a large blender or are concerned about the digestibility factor, go ahead and pre-soak it.
