I know a lot of people who would like to bake but don’t because pulling out the mixer and keeping track of the ingredients is just too much trouble. This simple recipe requires nothing more than a mixing bowl and a whisk. That’s it! Dessert couldn’t be simpler!

To make your own buttermilk for this recipe, add ¾ tablespoon of white vinegar or lemon juice to ¾ cup of milk (whole milk is best, but low-fat or skim will work). Mix and let stand for 5 minutes. The mixture may be a little lumpy, but that’s okay.

This recipe makes a 9×13 inch cake, two 8 inch rounds, two 9 inch rounds, or 24-36 cookies. See recipe notes for baking time.

To Freeze: This cake freezes beautifully. Leave the cake in the pan, cover with plastic wrap, then a layer of foil and freeze for up to a month.

Eggless Vanilla Cake One Bowl No Butter Or Milk

This delicious cake is so simple and easy to make and uses ingredients you most likely have on hand!

Like my chocolate cake recipe, this vanilla cake recipe works well with a few modifications:

To prepare the cake as a gluten-free vanilla cake recipe, I successfully used an equal amount of 4 cups of gluten-free flour instead of the all-purpose flour called for in the recipe.

To make the cake an eggless cake recipe, I used 2/3 cup unsweetened applesauce instead of the 2 large eggs in the recipe. You will notice that you may only need to bake the cake for a few more minutes. Be sure to check doneness with a skewer.

Fluffy Homemade Vanilla Cake Recipe

Some people had problems with the cake falling apart after baking, so I went back to the kitchen with the recipe and found that this variation of my vanilla cake tested perfectly for me and the other recipe testers I asked to test the recipe. The original vanilla cake recipe I posted was based on my very popular chocolate cake recipe, but I’ve found that using my butter cake as a base gives the most successful results from a wider range of recipe testers. If you prefer the original vanilla cake recipe I shared, simply use my chocolate cake recipe and replace the cocoa powder with the same amount of flour.

Both the cake and the chocolate frosting can be made in advance. Allow cakes to cool completely, wrap tightly in plastic wrap and place each layer in a ziplock freezer bag. Freeze the cake layers for up to a month.

To freeze the cake, simply remove from the freezer and allow to thaw in the refrigerator with the wrapper intact. Then freeze the cake when it is completely thawed.
