Many lemon bundt cake recipes begin with a yellow cake mix. I’m no stranger to cake mixes. In fact, there are times when I would definitely suggest using a cake mix as a great recipe shortcut.

While I’m certainly not opposed to cake mixes by any means, I really wanted a pronounced lemon flavor in this cake, but I also didn’t want the cake to be too sweet (sometimes cake mixes can make things extra sweet).

So we went for a simple lemon bundt cake with no cake mix. And it is and was everything the title suggests: simple. Time for another layer cake! Not quite 14 layers like my no-bake s’mores cake or the Smith Island cake, but just as fabulous as either. If you are a lemon dessert lover like I am, meet the crowning glory.

This lemon layer cake recipe is adapted from the most popular cake recipe on our website: lemon blueberry cake. Lemon blueberry cake has been among our top 10 recipes for the past 4 years. It’s moist, sweet, buttery and bursting with fresh lemon. Since the publication date, we have received many questions about leaving out the blueberries to keep things simple. We decided that a plain lemon cake needed its own blog post. Covered in lemon cream cheese buttercream and garnished with whipped cream, this towering beauty stands up to her blueberry-obsessed sister!

In addition to its taste and texture, this cake is loved for its lightness. Very basic ingredients including a base of creamed butter + sugar, eggs, lemon, milk and flour. We omitted brown sugar and substituted more granulated sugar. No rhyme or reason here – just didn’t feel like reaching for both types of sugar this time. Between the cake and the frosting, you need 2-3 lemons. Both juice and peel.

The key to this recipe is to use sifted all-purpose flour. Sifting the flour aerates it, creating an overall fluffier cake. Just as we found in our 6-inch citrus cake, cake flour is too light for this lemon cake; our cakes were squat and flimsy. All purpose flour is great, sifted all purpose flour is much better. Sift flour into a large bowl, then measure out 3 cups. Every time the word “accused” comes up

The lemon cake dough is velvety smooth and thick. Divide between 3 9-inch or 8-inch cake pans—about the same baking time for both sizes. For a 2-layer cake, divide batter evenly between two 9-inch cake pans. The cooking time will be longer, but you can use a toothpick to test whether it is done. This lemon cookie dough fits in a 9×13-inch pan. The cooking time will be closer to 40 minutes. And while we’re on the subject of different sized cakes, this recipe makes at least 30 lemon cupcakes. For 1 dozen cupcakes, here is our recipe for lemon cupcakes. They taste the same with the cake!

We were torn between cream cheese frosting and lemon buttercream, so we combined the two by adding 8 grams of cream cheese and a little extra confectioners’ sugar to the lemon buttercream. The result is an endlessly creamy and BUTTERY lemon cream cheese frosting that we know you’re going to love!!! Look at this!!!

For the intense lemon flavor, I used lemon juice in addition to the zest. The peel provides plenty of lemon flavor without overpowering the rest of the cake. It’s really delicious.

My grandmother always adds flavor to the cakes, bars and even the crusts. She prefers to use lime instead of lemon.

In Venezuela it is the other way around, lemons are the green ones and limes the yellow ones. I used to get confused between the two when I moved to the states.

I love it when the glaze dries up to a beautiful sheen and almost a soft crusty texture. You’ll see what I mean when you take a bite.

For the top, I boiled some thin lemon slices in equal parts sugar and water until soft. It makes the cake look pretty, but is completely optional.

While I wouldn’t consider this a healthy lemon cake, it’s definitely worth the indulgence (remind yourself that you’re baking with real, simple ingredients, not making lemon cake with cake mix).

Cake flour is very important to make this recipe light and airy. If you don’t have cake flour on hand, you can make your own using all-purpose flour and cornstarch. See the instructions at the end of the recipe card below.

Mary Berry’s Moist Lemon Drizzle Cake Recipe

Add lemon juice to the cake mix (like this lemon poppy seed cake), I don’t recommend lemon juice for this recipe as it can change the acidity level, which can affect the rise of the cake and the overall taste.

If you can’t find lemon extract, choose extra zest in the cake instead of changing the lemon
