This is a recipe my in-laws make for me and my husband whenever we go out to dinner. Simple, filling and delicious. You can change the vegetables to your liking!

The secret to really delicious fish cake stir-fried udon is sourcing really delicious fish cake! I always buy Korean food at H Mart because it tastes better. They contain green onions and sometimes corn!

Another secret to delicious stir-fried chewy udon is to never boil the noodles. If you boil and stir-fry the noodles, the noodles may become soggy.

Fill a large nonstick pan with water, bring it to a boil, and add the frozen udon cakes. Blanch for 1 minute. Do not boil. Strain and set aside.

Place in same nonstick pan over medium heat and add avocado oil. Add the garlic and green onions and sauté until fragrant. Quickly toss the kailan, bok choy, and thinly sliced ​​fish cakes. Sauté until vegetables are tender and fish cakes are cooked through (about 5 minutes).

Move the vegetables to the side and add the udon noodles. Season with soy sauce, dark soy sauce, oyster sauce, mirin, sesame oil, and pepper. Mix well until the noodles are covered with the brown sauce. Serve and enjoy!
