I’ve had a gluten-free vanilla cake recipe for a few years now and I’m excited to finally share it!

Like this gluten-free chocolate cake and gluten-free carrot cake, I tried dozens of variations to get this recipe just right.

The biggest trick to making a delicious gluten-free vanilla cake is to use a combination of sour cream and butter for richness instead of butter. This gives the cake the consistency of a wedding cake!

I also use this trick on gluten-free blueberry muffins. The oil causes the gluten-free flour to clump together and form a denser clump. Sour cream is also a key ingredient in this gluten-free coffee cake!

The Best Ever Vegan Gluten Free Chocolate Mini Cakes

NOTE: I use and recommend Bob’s Red Mill gluten free flour for this cake. I use King Arthur flour for many of my recipes, but I really like the consistency of Bob’s flour for this recipe!

Note: Alternating the dry ingredients with the wet ingredients will ensure that the flour is incorporated into the batter. This prevents a dry, grainy gluten-free vanilla cake.

When the dough is ready, pour it into the pan of your choice and bake. I recommend making two 8-inch round cakes or one 9×13-inch cake with this gluten-free recipe.

This easy mini cake recipe is so much fun to make! And guess what? Each mini cake consists of two beautifully baked cake layers and is decorated just like a regular cake – except these mini cakes are only 4 inches and are a great little treat! These little cakes are perfect with red velvet, pistachio, Funfetti, lemon or vanilla. small treat!

Mini cakes have been around for a while, but Chelsweets made them popular last year with her adorable mini cake videos.

While some of her mini cakes use cupcakes as a base, I thought it would be fun to make three layered mini cakes like a regular cake. It’s a bit of a visual trick to look at these cupcakes as they look normal if you don’t mind something to give you the right size!

There are a few different ways to make mini cupcakes: either bake in 4″ cake pans or in a large cake pan and shape with a large (3-4″) cookie cutter. Either way works fine! Personally, I prefer 4-inch cake pans and then I only do two layers, but you can use a 3-inch cookie cutter and do three layers.

Each mini cake recipe is designed to make mini cakes. Theses small cakes are still quite large when served, so you can easily split the cake between two people.

Easy Vegan Mini Cakes Recipe (secretly Vegan & Gluten Free!)

This cake recipe is very simple for this mini cake recipe. As I mentioned earlier, you can use two 4-inch cake pans or a large round cookie cutter.

For the cookie cutter option, you’ll need: a round 3-4 inch cookie cutter (may vary depending on size), a medium-wall baking sheet, and parchment paper. This is for making a cake portion of vegan mini cupcakes that are not identifiable.

To frost the mini cupcakes, I recommend using standard cupcake tools. This includes a cookie cutter, small offset spatula, bench scrapers and piping tips + bags if you want to decorate your mini cupcakes.

These mini cakes are surprisingly simple and easy. If you’ve ever baked a cake, you’re good to go! The full recipe is, as always, below on the recipe card, along with ingredient measurements. However, we will cover some basic tips. here is the visual.

Chocolate Cranberry Christmas Mini Cakes (vegan, Gluten Free, Nut Free)

First you start by making the mini cakes into small square cakes. I recommend an 8×8 inch pan, like the ones you use to make cupcakes.

After making the cake batter, you bake it like a cake pop. The only difference here is that after cooling, we cut the cake layers from the sheet cake! You will have cake scraps, so see the next section on how to reuse them 🙂
