Traditionally zucchini fritters are made with eggs, maybe some dairy, and flour or bread crumbs. But it’s easy to change them to fit whatever diet you need.
Because I’m somewhat of a patty expert (I have an entire vegetarian cookbook full of burgers), and I can promise you that you don’t need eggs, dairy, or gluten to hold these babies together or keep them from getting soggy. no need
The secret is in the ratio of wet and dry ingredients. You need some kind of binder to hold them together, but it doesn’t have to be eggs. My secret here is just almond flour, gluten-free breadcrumbs, a touch of sauce and perfectly moist zucchini.
If you don’t need to cut out gluten you can easily use regular flour and bread crumbs! You need enough to bind, but not too much. The key is to make sure to squeeze the water out of the zucchini. Zucchini has a lot of moisture, especially when cooked.
