Preheat your oven. Line baking pans with parchment paper and/or spray well with non-stick cooking spray and set aside. (I spray my round cake pans, add circles of parchment paper to the bottom and spray a little more.)
Mix in the eggs and egg whites, one at a time, until the mixture is very light and fluffy. You want to get a lot of air in at this point. Because we don’t separate the eggs and beat the whites separately, you want to beat the eggs well.
Divide the cake batter between the baking pans as evenly as possible, smooth the tops and bake on the middle rack in the oven. The cakes will be done when the edges look golden and the center of the cake comes out clean when tested with a toothpick.
Cool for 15-20 minutes in the pan or until you can handle the hot pans with your hands. Turn out onto cooling racks to cool completely.
