Well, fish paste is made from the meat, bones and clean heads. After that, it is hydrolyzed with the enzyme bromelain from young pineapple so that it is broken down into amino acids. Then the fish concentrate is filtered and added salt which can be a natural preservative and MSG as an additional source of glutamic acid and glutamine. This concentrate in the food world is known as hydrolyzed fish protein and is the basic ingredient for making soy sauce, sweet soy sauce, oyster sauce, and other cooking sauces.
Naturally, glutamic acid is found in 10-25% of all protein in food. Natural monosodium glutamate can be found in almost all food ingredients, especially high protein foods such as cheese, meat, fish, seafood and even mushrooms and some vegetables such as tomatoes and seaweed.
“Glutamate and Glutamine are like brothers because in the body Glutamate can be directly converted into Glutamine and other amino acids needed. Besides that, as glutamic acid, the amount is dominant, which is more than 60% in the human body and also in the human brain,” explained Endang S. Sunaryo, Nutrition and Food Observer.
