Many homemade vegan ice creams are made with coconut milk or coconut cream, and while I love those, the strong coconut flavor isn’t always what you want in an ice cream. I wanted to make vegan vanilla ice cream that is neutral enough in taste, all wonderfully lush. So this vanilla ice cream recipe is made with cashew (which makes it super rich), plant-based milk (I used oat milk), sugar, and vanilla extract or vanilla paste. The texture and richness is similar to Ben & Jerry’s or Häagen Dazs, but completely dairy free!
You will need an ice cream maker to make this recipe. I love this it works great and is easy to use! Refrigerate the dish overnight (I always store mine in the fridge so it’s ready to go). Then add the ice base and press the button to cut. After 25 minutes you will have perfectly smooth ice cream.

Softening the raw material will help them to mix first. If you have a high-powered blender, you can skip this step, but if not, this step is essential for smooth and creamy ice cream. Add to a small pot to soften the raw material, cover with water and cook for about 10 minutes until the raw material is soft. Wash and rinse raw materials before use.

However, the more “jammy” it tasted, the more it didn’t feel right, so I quickly scrapped that idea! I kept the ingredients minimal for this vegan strawberry ice cream. In fact, if you don’t want to make strawberry syrup, you can even leave out the arrowroot and lime!
Mint Chocolate Chip Ice Cream (vegan, No Churn!)
First, wash the strawberries well and cut off the ends. Cut the berries into small cubes and place them in a medium bowl. Sprinkle the sugar on the berries and give them a good taste. Now cover the plate, and allow them to sit and cook for 20-30 minutes.
Next, put the strawberries on a fine mesh sieve and separate those delicious strawberry juices. Set the syrup aside as this will be part of the strawberry sauce for the ice cream.
Add the chopped strawberries to a food processor or blender and blend until smooth. You can also use an immersion blender/stick blender for this. Set the strawberry puree aside until you are ready to add it to the ice cream mixture.
For the strawberry sauce, add the reserved strawberry syrup to a saucepan with the cornstarch and lime juice. Knead the mixture well until there are no visible lumps of cornstarch.
Vegan Frozen Yogurt In The Kitchenaid Ice Cream Attachment
Now heat the mixture over medium heat until it melts. Use a rubber spatula to prevent the dish from burning to the bottom of the pan. After a few minutes, the mixture will thicken. Remove from the heat and let it come to room temperature while you make the strawberry ice cream.
Making the ice cream base is similar to my vegan fruit ice cream recipe. First, beat the coconut milk/coconut cream in an electric mixer for two minutes until frothy.
Add in the sweetened condensed coconut milk and vanilla and beat again for about a minute until combined.
Finally, begin adding the reserved strawberry puree to the ice cream mixture in half-cup increments, swirling between each one. When mixing water-based liquids into fats, I recommend not adding all of the pureed foods at once.
Coffee Chip Ice Cream (dairy Free, Vegan, Paleo)
After all the strawberry puree is mixed into the mixture, slowly add it to your ice cream maker and cut according to the manufacturer’s instructions.
As for the strawberry sauce, you can keep this aside to serve or work it into the ice cream to give you a strawberry sauce. For the latter, fold half of the sauce into the ice cream once it’s cooled, then transfer the ice cream to a loaf pan or container.
Add half of the remaining strawberry sauce over the ice cream and swirl with a spoon. Finally, cover the ice cream and put it in the refrigerator for at least 2 hours.
This vegan strawberry ice cream will keep for up to two months in an airtight container in the refrigerator.
