Imitation Crab: I chose to go with imitation crab meat for this recipe. Imitation crab is not really crab meat, but a combination of white fish paste and fillers, known as ‘surimi’. It’s still technically seafood, but it contains much more salt and preservatives than fresh crab.

Imitation crab is definitely less expensive, so it’s used more often in recipes like Minnesota Crab Louie or California Rolls. If you choose to use real crab, go for canned lump crab meat or backfin. It’s still pre-cooked, but more authentic.

Well…if you invite me to your party, the crab dip won’t last long. But, if you have more self-control, cover the leftover dip in the refrigerator for up to 3 days. Since this is a cream cheese based dip, don’t let it sit at room temperature for more than 2 hours.

Of course! If you’re not going to eat the dip in a couple of days, freeze it. It will keep in the freezer for up to 2 months when stored in a freezer-safe container. However, the consistency of the dip may change when thawed.

My friend Liuda, famous for her recipe: Shrimp and Mushrooms in a Garlic Bisque Sauce, shared this amazing crab salad recipe with me. She invited us for dinner and served this. We loved it!

Shrimp And Crab Dip

This is different from our first crab salad recipe, with more fresh ingredients. The taste is excellent. Surprisingly it tastes great the next day too. I was worried that the cucumber and tomatoes would be weird, but they weren’t. They are nice and crisp after cooling.

1. Chop/cut the crab into small pieces. You can chop with a knife or use a food processor and pulse in batches. Try breaking it up a bit to coat it better with the dressing. P.S. Imitation crab meat is made from white fish.

I’ve loved this stuff since I was a kid and I can’t get over it (don’t judge me). I always ask my parents to buy it when we go grocery shopping together.

2. Chop 2 medium tomatoes and squeeze out any excess juice. It’s not a bad plan to seed them so that the next day’s salad won’t be too juicy. Make small dice from the cucumber. In a large bowl, combine the chopped tomatoes, sliced cucumbers, shredded crab and 1/4 cup green onions.

3. In a small bowl, combine 1/2 cup mayo and 3 cloves of garlic. Add dressing to crab salad to taste. If you prefer a juicier salad you can add more mayo. Refrigerate until ready to serve.
