We are back with another recipe from Mo, one of his favorite meals, Indonesian inspired fried rice! With Southeast Asian flavours, spices and citrus, this is no ordinary fried rice. It’s packed with veggies and made with tempeh for a boost of plant-based protein. It all comes together in a skillet, or wok, and it’s a fantastic way to use up leftovers in the fridge.

The spice level is customizable, as are the veggies, but we’re sharing a basic recipe that you can use as a starting point. It is reminiscent of meals we ate together in Bali, and actually a dish he often ate growing up as a child living in Southeast Asia. We hope you enjoy this twist on a simple dish!
Quinoa Gado Gado Bowl
If you can’t find Kecap Manis easily, you can substitute it using regular gluten-free soy sauce with a little coconut sugar added for sweetness. Alternatively, you can use Coconut Aminos or even Liquid Aminos!
Feel free to customize the vegetable mix with what you have on hand, and if you’re not a fan of too much spice, adjust accordingly.

Nasi Goreng (indonesian Fried Rice!)
I’m here with another leftover rice recipe for you all. A couple of weeks ago, I shared the Instant Dosa recipe with leftover rice and that recipe is loved by all of you wonderful readers.
The thing that differentiates it from all Fried Rice recipes is that it consists of kecap manis sauce, a sweet soy sauce that gives the rice a dark brown color and caramelizes the rice when it cooks.
This recipe is shared by my cousin. He is from Malaysia and he helped me understand the flavors and also shared all the background information, tips and tricks for making delicious vegan Nasi Goreng. 😊
Now add the green onion, carrots, bok choy, bell pepper, sambal, kecap manis (sweet soy sauce), washed jasmine rice and water.

Once the IP cook time is over, allow the pressure to release naturally for 10 minutes and then quickly release any remaining pressure.
Let’s saute the onion for the toppings. You can skip this step and use store-bought fried onions to make the process easier.

Garnish with fried onions, chopped green onions, a drizzle of Kecap Manis and some lime juice.
Indonesian Curry With Star Anise Rice
To make Kecap Manis at home, combine ¼ cup regular soy sauce (I use Kikkoman) and ¼ cup brown sugar over medium heat. Bring to a boil and reduce until it is a maple syrup consistency. It will thicken more as it cools. To make gluten-free Kecap Manis, replace the soy sauce with tamari.

Like other fried rice recipes, it keeps great for a day or two in the refrigerator. Sprinkle some water while you heat the rice in the microwave or on the stovetop.
Traditionally, Nasi Goreng is topped with a runny fried egg and served with a few slices of fresh tomato and cucumber. But since we don’t eat eggs, I skipped it and served it with slices of fresh cucumber and tomatoes, a drizzle of kecap manis and lime juice, and a sprinkle of fried onions and spring onions.

Freshly cooked rice becomes sticky when added to mix recipes. Let the rice cool down to allow the outer layer to dry out a bit. This gives it the perfect texture when frying and ensures it’s not sticky.

Indonesian Gado Gado [vegan]
The fermented soy cake known as tempeh is a delicious, protein-rich alternative to meat. I used to eat it all the time in Indonesia before I became vegan. It has the crunchy texture I wish tofu had and is especially delicious when stir-fried with cashews!
Expect to find tempeh and tofu in virtually every local restaurant (warung) you visit. When you eat local, you can also expect to pay just a few dollars for an entire meal.
Without even trying to be, many common dishes in Indonesia are vegan by default. Most of them are loaded with veggies and are delicious. I was relieved to find that I could go just about anywhere and find a dish that would work for me. The following are some really great ones:
