This Sesame Soba Noodle recipe ticks all the boxes for our favorite recipe. it’s fast It’s easy. It is healthy. It is absolutely delicious. And it goes with many of our favorite dishes and even makes a main dish on its own.

Soba is the Japanese name for buckwheat, buckwheat noodles have more protein and fiber than many other noodles. Like many Japanese ingredients, they also have medicinal properties and have been shown to help regulate blood sugar, improve heart health, help with inflammation and possibly prevent cancer.

These days, soba noodles are easier to find, so you don’t have to go to a specialty store or an Asian store to get them. I find it at my local Smith’s Market, where Kroger sells soba noodles under the HemisFares brand, which features imported products from around the world.

We love eating Asian food, but sometimes rice as a side can get a little boring. That’s where soba noodles come in.

Cold Soba Noodle Salad Recipe With Sesame Ginger Dressing

Soba noodles are best served plain. They don’t need creamy sauces or complicated ingredients to dress them up. In addition to being easy to serve, soba is just as good chilled as it is hot.

Soba noodles don’t take long to cook and are best cooked al dente to retain some of their earthy chewiness. A few minutes of simmering time is all you really need.

Unlike traditional pasta noodles, soba noodles need to be rinsed once or twice in cold water to remove the gluten and starches released during cooking so they don’t turn to mush.

As with any noodle recipe, it comes down to spices and sauces to give the noodles their flavor. And again, with soba, you want to keep things simple. And this means that a simple sauce is suitable.

The sauce comes together as quickly as cooking the soba noodles. If you like a sharper bite, add a pinch of red pepper or ¼ teaspoon of chili garlic sauce to the mix.

When it comes to sesame oil, make sure your oil is fresh. Sesame oil has a short shelf life and will deteriorate after opening if not stored properly. I keep mine in the fridge, but I always have a fresh bottle in my pantry.

To toast your sesame seeds, use a dry pan over medium heat. Stir the eggs frequently in the pan to avoid burning. Do not skip this step, it will make a completely different toast.

Continuing with our simple theme, the only flavor enhancer in this dish is green onion, and a large amount is added in two different stages.

How To Make Soba Noodles (easy Step By Step Recipe)

Large pieces of green onion are quickly cooked before adding the sauce to the dish. Then, while the noodles are coming in, chop up a bunch of green onions to cook in the noodles and hot sauce, reserving just before tossing them to eat fresh and bite.

These Sesame Soba Noodles are amazing on their own or as a side dish, but they also make a super easy base for noodle bowls.

Today I have a fresh and delicious bowl of soba noodles to start the week off on a healthy note. The best thing about this bowl is that it’s so simple, but has a great zippy flavor. There is a light sesame-ginger dressing that coats the soba noodles perfectly. Additionally, I chose to mix in a bunch of hearty spring vegetables, but keep reading for some more tips to customize your noodle bowl!

Recipe: Smoked Salmon Soba Noodle Salad

Soba noodles come from Japan, where Jack and I fell in love with them. Made from buckwheat flour, they have a wonderful nutty flavor and a soft, fluffy texture.

Traditional soba is made with just buckwheat flour and water, so it’s easy to make gluten-free soba noodle recipes: despite its name, buckwheat has nothing to do with wheat! However, since 100% buckwheat noodles can be fragile and difficult to work with, you’ll often see soba that contains a mixture of buckwheat and wheat flour. These are the noodles I usually choose (I love these too) – they still have that delicious buckwheat flavor, but are easier to toss in a soba noodle salad like this one.

If you’re gluten-free, be sure to look for 100% buckwheat soda (these are great!). Both varieties are available at Asian markets or in the Asian section of regular grocery stores.
