This casserole isn’t cheesy like a mac and cheese. I wanted it to be a little cheesy, just enough to make that crunchy baked spaghetti that everyone fights over. I combined my two favorite Polish and German foods in one dish, added cheese and called it a casserole. You can’t beat it.
I used dry and store-bought spaetzle. You can also use any type of egg noodles in its place if you can’t find spaetzle at the grocery store. If you’re feeling ambitious, you can make your own spaetzle by hand at home.
My mom normally hates cheese and any dish I make with a lot of cheese. She’s sort of lactose intolerant, so I gave her a break. Despite the lactose problems, she was interested in this recipe.

Papillon pasta adds an excellent twist to this recipe. Besides being wickedly colorful, this dish is wonderful for you, because it’s packed with antioxidant-rich veggies and healthy fats from olive oil. yes, it could be lightened up a bit by using “yolkless” egg noodles… but I usually just roll up with the old ones. ‘And yes, there are healthier alternatives to turkey Kielbasa…. but honestly, it MAKES the dish here. you’ll see what I mean when you can’t stop sneaking chunks of the crispy pucks off your plate as you finish your plate! 🙂 when I wrote the last line, it occurred to me that I had blogged something in the past with Kielbasa where I warned you about the yum factor of these crunchy pieces of meat. I looked back and (article linked) it was quite similar to this dish I’m about to blog about, but a little more fussy, as it used some red wine and tomato paste to give depth to the flavor. this is a little simpler and the perfect weeknight evening meal, with enough for a business lunch the next day. anyway, here’s what happens mate:
Two peppers of various colors (not green) – for this I used red and orange.
1/2 glass of water (you can use some of the hot water from cooking the pasta if you remember to reserve some)
Your favorite spices (I used a few blends of: chili powder, cumin, coriander, dried parsley, dried oregano and dried basil and a pinch of nutmeg)
Macaroni Casserole (w/ Kielbasa Sausage)
I added about a cup of spinach leaves which i roughly chopped – stirred them in at the end – totally optional – but i feel it gave this a brighter fresh colour, as well as adding wickedly good nutrients. your call. (I always have a bag of spinach in the fridge because I put it on all my sandwiches and burgers instead of lettuce)
Cook your egg noodles according to package directions. drain, rinse and set aside. (scoop half a glass of water and set aside before draining)
Slice or dice your two colored peppers into the size of your choice. peel the onion, cut it in half and then thinly slice those halves. set aside with the peppers on a plate. slice turkey kielbasa. thin but not too thin. open your can of tomatoes. take the largest non-stick frying pan you have (I sometimes use a wok for this) and brush it with a little olive oil. start it on high, and once hot, add the kielbasa. fry it until done to your liking (crispy edges) and remove to a plate. add another round of oil and add the peppers and onions. saute over medium-high heat until soft and delicious-looking. as you do this, add your spices right on top. cooking them intensifies their flavour. add salt and pepper last. then go ahead and add the tomatoes and a half cup of water. bring to a light boil and reduce the heat to low. stir the kielbasa and add the spinach if you’re rolling with it. stir for a minute and reduce the heat. put the egg noodles in a LARGE bowl where you will combine everything. hit the noodles with a swirl of the olive oil. pour the mixture right over the noodles. Stir to combine everything. taste it. does it need more salt or pepper?
