Baking Recipes, No Stand Mixer Required

Get an idea of ​​what’s done in a basic 2-layer white cake with this recipe overview. Review the common ingredients and change it to suit your taste or occasion. Add sprinkles and make it a birthday cake. Add vanilla or chocolate to your taste. The possibilities are endless.

Preheat the oven to your recipe, usually 350°F. To help remove the cake once it’s baked, you can spray two round pans with baking spray and line the bottoms with parchment paper. Then, sprinkle the paper and dust with flour. If you are making a sheet cake, you can skip the parchment paper step.

In a large bowl, whisk dry ingredients such as cake flour, sugar, baking powder and salt until combined. This helps ensure that the dry ingredients are evenly distributed throughout your batter when you mix them later.

In a stand mixer fitted with a flat beater or flex-edge beater attachment, beat the butter and sugar until pale yellow in color and fluffy. This step helps aerate the butter and is crucial to the texture of this classic sponge cake. Finally, add the egg whites and beat until combined.

Add one-third of the dry ingredients and mix until combined. Then add a third of the milk and vanilla or melted chocolate and continue to mix. Repeat three times until all ingredients are used up. Your batter should be smooth and slightly stiff.

Divide the batter between the prepared cake pans. Bake on the center rack until a toothpick or cake tester comes out clean. It’s important to either bake your pans on the same rack, or rotate them halfway through to help ensure both cakes bake at even rates. Cool the cake briefly in the pan, then carefully invert the cake and transfer, flat side down, to a cooling rack to cool completely.

With a stand mixer fitted with the flat beater attachment, beat the butter until it is soft, light and fluffy. Add powdered sugar in increments, beating on high speed after each addition until just combined. This will help the sugar completely dissolve in your mixture. Finally add the milk and salt and stir until combined.
