Sean LOVES pancakes and waffles. I always have to make a double batch for both of us because she can easily eat 8-10 pancakes (plus bacon). Have you seen the movie Uncle Buck? If you haven’t, you should watch it, it’s amazing. In one episode, Uncle Buck makes GUMONGOUS pancakes and I feel like I have to master it.

After watching ABC’s Shark Tank, I was intrigued by the Kodiak brownies at Costco. We love watching it. This pancake mix is marketed as a healthy, protein-packed option for pancake lovers. I think high protein products are very popular right now (Greek yogurt, protein bars, protein cereal, protein powder).

Kodiak Cakes Plant Based Pancake & Waffle Mix Review

A box of Kodiak brownies is huge. It comes with 3 large bags full of mix, so whether you make pancakes twice a year or once a month, it might take you a while to get the hang of it. I bought it for $15.99, which is more than I pay for other pancake mixes. The box contains 3 recipes that you can use to make pancakes or waffles. #1 with just the mix and water, #2 with the mix and milk replacing the water, and #3 with the eggs and milk replacing the water. I did method #1 with just the mix and water, and I also did method #3 with one egg and milk to replace the water. Option 3 has more protein due to the extra protein in the eggs and milk, but this option is also higher in calories and fat.

If you just mix and use water, the nutrition for 3 pancakes is great, 190 calories, 14 grams of protein, high fiber, low fat, low sugar. The only thing is, if you’re watching your sodium intake, the sodium content is a little high.

If you are looking for soft, fragrant, thick pancakes, you should add milk and eggs. If you’re buying this just to be a healthy option, you can just use water and mix, but you won’t get as tasty or thick pancakes. They still taste good using just water, and mixed with eggs and milk, they taste even better. If I were a weight watcher who still wanted to eat pancakes on a regular basis, I would buy this. To keep it healthy, I think they taste great with low-sugar jam or Greek yogurt, honey, and fresh berries.

Kodiak Cakes does a great job of offering a high protein pancake using whole grains. All factors considered, including cost, I myself would not repurchase them. The box is huge and when I make pancakes once or twice a month, I love that they are soft, thick and delicious. I also like to eat them with syrup, butter, bacon, hazelnut spread, coconut syrup and mac nuts.

Kodiak Cakes: My Favorite Waffle Mix!

Nutrition: 8/10 (slightly high in sodium, low in fat, high in protein, low in calories if made with just a mix and water)

Taste: 6.5/10 (I love them with eggs and milk and I still crave dinner style pancakes)

Have you tried Kodiak Cupcakes? What did you think? Have you made muffins or waffles with the mix? What do you put on your pancakes?

Why should you make this Kodiak Cakes Chocolate Chip Cookie Recipe? Here are some reasons to love this snack:

As always, exact ingredient amounts are on the recipe card at the end of the article!

I chose Kodiak Buttermilk Pancake Mix in this protein cookie recipe because it is relatively low in sugar. This mix contains only 2 grams of added sugar per 53 grams of mix (half a cup). If you are using a different Kodiak pancake mix, you may need to reduce the sugar in the recipe.

Hot tip! Kodiak Cakes recommends refrigerating the boxed pancake mix after opening the box. This helps keep the whole grain in the mix fresh.

Kodiak Cake Pumpkin Chocolate Chip Cookies

In the US, we like to use measuring cups to measure dry ingredients in baked goods recipes. I recommend using a food scale and weighing the dry ingredients instead. This will help you achieve consistent results with your Kodiak cookies every time.

If you make cookies a few times a year, why not get a cookie? The pumpkin helps to make more uniform cookies for even baking. (They’ll look pretty, too.)

I used a thick baking sheet here. If your cookie sheet is a lighter color, your baking time may take longer.

Place the butter, white sugar, brown sugar, and vanilla in a medium-sized mixing bowl. Using an electric hand mixer, beat until creamy. You don’t want to overmix it – about 2 minutes is a good time to mix.

Then add the egg and Kodiak waffle mixture and mix again. Once the Kodiak mixture is fully incorporated, stir in the chocolate chips.

Now place the bowl of Kodiak cookie dough in the refrigerator and chill for an hour. This will help make the cookies soft and thick.

When you put the warmed cookie dough directly in the oven, the butter melts too quickly and the cookies spread too much. The result is a thin cookie with crisp edges and a chewy center (see below). That’s fine if that’s what you want, but most people want dense chocolate chip cookies.

When the cooling time is up, preheat the oven to 375F (190C). Line a metal cookie sheet with parchment paper.

Place nine scoops of cookie dough (half of the dough) on a baking sheet. Leave enough space on the tray between the cookies. You will cook half a batch at a time.

Bake the Kodiak Cake Cookies in an oven preheated to 375 degrees Fahrenheit (190C) for 8-11 minutes. They take 9-11 minutes on a light cookie sheet or 8-9 minutes on a dark cookie sheet. The cookie sheet should be on the oven rack about a third of the way from the top of the oven.

Here’s the secret to great chocolate chip cookies: low bake. If you are making soft cookies, make sure you remove them from the oven before they look done. They continue to solidify as they cool.

To finish cooling the cookies, let them cool on the baking sheet for 2 minutes before transferring them to a wire rack. If using a heavy baking sheet, you’ll want to get them off the sheet as soon as possible.
