With Lunar New Year or Chinese New Year just around the corner, I thought it would be a perfect time to share this recipe for Shanghai Style Fried Rice Cake. It’s a classic Chinese recipe that usually includes some type of protein, Asian vegetables, and a soy sauce. The flavors of Chinese fried rice cakes vary by region and even country! For example, there is a very similar Korean dish with slightly different flavors. This is a vegan and gluten-free recipe inspired by the decade of my life I spent growing up in Shanghai.

While you can absolutely enjoy fried rice cake any time of the year, it is usually enjoyed around Chinese New Year/Lunar New Year because rice cakes (nian gao/年糕) symbolize good luck and prosperity. In fact, the literal Chinese translation is “year cake”. If you ever go to a traditional Chinese New Year dinner, expect to be served a plate of sliced ​​rice!

Vegan Tteokbokki Recipe

This Shanghai-style fried rice cake recipe is vegan, gluten-free, refined sugar-free, and nut-free. It’s easier to make than you think, and it comes together in a pan.

Our vegan Chinese sauce is a modified version of the classic. It is also gluten-free and can be made without refined sugar. We will use gluten-free soy sauce, which I think is best for flavor, vegan and gluten-free oyster sauce, sugar, cornstarch or arrowroot flour, and sherry wine instead of Shaoxing wine. Shaoxing wine can be a tricky ingredient to find, and it also contains gluten, but sherry wine is a great substitute! Instead of gluten-free soy sauce, you can use liquid aminos or coconut aminos, but note that the taste will change slightly.

If you’re wondering where to find Chinese rice cakes, I recommend checking out a Chinese grocery store or a general Asian grocery store. If your area has a Chinatown, you can also check to see if fresh sliced ​​rice cakes are available. For the most part, however, Korean grocery stores will be your best bet. You can find packages of dry sliced ​​rice in the fridge and you’ll want to make sure they’re gluten-free. The ingredients should be rice or rice flour, but some brands may add wheat flour, so it won’t hurt to double check.

Having a bowl of spicy tteokbokki (떡볶이) at a crowded street market in Korea recently brought back a lot of nostalgia for me. These chewy rice cakes with sweet and spicy gochujang sauce… Mmmm! It was like the taste of my childhood.

I recently took a trip to Korea to visit my family. The two weeks of mandatory quarantine upon arrival were well worth the effort. After Lent was over, I was glad to go out and go to different places for meals. Enjoying Korean street food was no exception in my food adventure.

Tteokbokki (떡볶이, often pronounced as topokki or ddukbokki) is a popular Korean street food made of small cylinder-shaped rice cakes called tteokbokki-tteok. Although the literal translation of the name means fried rice cake, but the actual cooking is based on a method of cooking on fire.

White rice cakes are cooked in a sweet and spicy gochujang-based sauce. The strength of Korean peppers is often added to enhance the spiciness.

Interestingly, Korean people have different preferences when it comes to this popular dish. Of course, the main ingredients are almost the same: rice cakes!

As the title says – “spicy rice cakes”, tteokbokki is meant to be spicy, but the heat level can be adjusted. The red chili (gochugaru) and gochujang used to make tteokbokkisauce are responsible for the spiciness. You can control the amount according to your preference.

You can also add cream or milk to reduce the spiciness, as these dairy products help combat the burning sensation caused by intense heat.

When it comes to tteokbokki rice cake (tteokbokki tteok), look for the short stick form. The size of a finger is the most common. Make sure they are made with 100% rice flour.

Some rice cakes are made with wheat flour, which works well in most tteokbokki recipes, but they won’t have the chewy texture you’re looking for.

You can also find flat and round rice cakes in stores. But save those for rice cake soup or stir-fries.

Spicy Korean Rice Cakes (tteokbokki) Recipe

The sauce is a mixture of Korean red pepper paste (gochujang), Korean chili flakes (gochugaru), soy sauce, and corn syrup (or sugar). Gochugaru adds spiciness and red color. You can leave it out if you want a milder taste.

Anchovies are traditionally combined with stock to add an umami flavor to the mix. You can replace the stock with water, but the overall flavor will be mild.

Korean Syrup: Spicy Korean rice cake is a slightly sweet dish. However, there is no sugar in this recipe. Using the syrup will brighten the finished dish and add a subtle sweetness without being too sweet. If you prefer not to use syrup, substitute 1 tablespoon of sugar.

How to make chili powder: If you only have coarse Korean chili flakes (gochugaru), process them in a blender until very smooth and finely ground. You can skip this step if you want, but you will see chili flakes in the rice cakes.

Korean Spicy Rice Cakes {tteokbokki}

Note: I mixed in 1/2 cup chili flakes even though I only need 1 tablespoon for this recipe. I want to keep the rest in the fridge to use later when I make the tteokbokki again, and to brighten up other dishes as well. Store chili flakes in a glass container and they will last for over a year if stored in the refrigerator.

Some people like to add cabbage, onion and garlic, but I like to keep the rice cake simple to highlight.

If your rice cakes have hardened from being stored in the fridge, soak them in water for 10 minutes to soften them a bit.

Some Korean or Asian shops have freshly made rice cakes. Because they are so soft and ready to use, you don’t need to soak them in water before cooking.

Vegan Dduk Guk

Boil large dried anchovies in water for 5 minutes. Discard the anchovies and seaweed and save the broth.

Fish cake sheets (eomuk, 어묵) and Asian leeks are commonly used in any tteokbokki recipe. They are optional but recommended. You can also add shredded cabbage and hard-boiled eggs to make your Korean rice cake dish hearty.

In a large skillet or wok, mix the anchovy stock with the chili paste, chili flakes, and corn syrup. Add the rice cakes that have been drained from soaking.

When the sauce boils, reduce the heat to low and let the tteokbokki simmer until the rice cakes are tender and the sauce has thickened. It takes about 5-7 minutes.

Grilled Rice Cakes With Furikake Recipe

You will have to serve the tteokbokki immediately. As it cools, the sauce will thicken further and the rice cakes will harden.

And did you know that tteokbokki often goes well with gimmari (Korean fried seaweed)? Try it and you’ll see why local Korean street vendors always sell them together.
