So much of my love for food comes from my mom and dad! Growing up, I spent hours and hours in the kitchen with her, making her recipes and learning from her years of cooking experience. I hope my children have the same memories with me! Holidays always bring out the nostalgia of cooking, and making my family’s traditional recipes for Easter is no exception. Recipes like Charoset make me connect with my heritage, and it’s so cool to see my kids connect with them too. I hope they make this food for their own families someday! This post is full of the Vegan Easter recipes I would serve, both at Easter dinner and the week after.

Passover is a Jewish celebration commemorating the liberation of the ancient Hebrew from slavery in Egypt. The name comes from the “passing” of the forces of destruction, and it is celebrated for a week in the spring! One of the most important features of Passover is removing leaven (usually yeast) from our diet and eating only unleavened bread (called Matzo). Unleavened bread reminds us of how quickly the Jews had to leave Egypt to escape suffering because they didn’t have time to wait for their bread to rise! In Judaism, Passover is a special occasion. It’s a holiday meal we look forward to all year! Passover is meant to be a big celebration, starting with the first night and the seder. Here is a blog post I wrote about how to make a Vegan Seder Plate! These dishes are the ones I would use to plan an extra special vegan and gluten free Easter dinner.

For a sit-down dinner, I like to have a few soups and salads. It gives everyone at the table a variety of things to try. Plus…I love the leftovers for lunches the following week from keeping Easter!

Since Easter happens in the spring, many of the same vegetables you see at an Easter dinner are served here as well! I like to make a few vegetables to go with the meal, then serve them with a favorite sauce for optional drizzling.

In a traditional Easter dinner, families may serve fish or breast, but since I’m vegan and don’t cook with meat, I rely on these dishes that are just as special! I love cooking with cauliflower as a main dish because it feels substantial, plates beautifully and absorbs the flavors around it.

Easter dessert usually means one thing: macarons! Macaroons are an Easter favorite because the traditional, unaltered recipes do not require yeast or yeast. Most people buy the canned version, but making them at home feels really festive! I also have a dessert version of Matzo Crack, which is a great way to make plain plain matzo a little more fun.

After the formal Passover dinner there is a whole week of what we call “Keeping Passover”. This is a time of full Kosher eating, especially avoiding foods with leavening such as yeast or grains that can ferment and become sour, such as wheat, barley, spelt, oats and rye. Here are a few ideas as you plan a week of meals using these guidelines!

Vegan Cream Of Mushroom Soup Recipe

Cholent, the traditional Jewish Sabbath stew, is a meat or chicken dish with potatoes, beans and cherries as basic ingredients, or, in Sephardic versions, with wheat berries and chickpeas. Cholent is hearty lunch fare, and it can be on the heavier side, which is why some people never warmed up for it. But this can change with one taste of this vegetarian version of cholent.

This recipe is adapted from the cholent in the Lubavitch Women’s Cookbook entitled “Spice and Spirit: The Complete Kosher Jewish Cookbook”, first published in 1977 and a classic also known as the “Purple Cookbook” . Some of the ingredients have been changed from the original recipe, and this version is cooked in a crockpot. The recipe combines signature cholent ingredients of Ashkenazi cholent (beans) with Sephardic cholent ingredients (chickpeas).

This meat-free cholent is made with red and white beans, chicken peas, cherries, potatoes and tomatoes. A generous amount of onions and dry onion soup mix give it a lot of flavor.

Red beans are oval-shaped and smaller than kidney beans. They have a smoother texture than kidney beans and they don’t need to be cooked as long. But since the cholent cooks in the slow cooker for several hours, any type of bean is fine. All the beans and the chickpeas need to be soaked overnight, so take this into consideration for your timing. The crust does not need to be washed beforehand.

This is a delicious and much lighter than the typical meat or chicken cholent. Don’t be surprised if people ask for seconds and thirds.

Like all stews, the cholent also tastes very good reheated. Store leftovers in the refrigerator in an airtight container for two to three days.

Note: Check the water level of the cholent occasionally as it cooks. If too much water evaporates, add some water to the cholent.
