So many people feel the need to cheat with their diet this time of year. With parties and gatherings and sugary foods and carbohydrate-packed treats everywhere, it’s sometimes hard to resist.

But let’s face it, sometimes the pressure to cheat isn’t even about the food. It’s the social pressure to “fit in” with the crowd. It could be about not hurting someone’s feelings for not eating the food they brought. It could even be about party jitters that prompt you to calm your nerves with food.
I have issues with all of these things, but over the years I’ve developed ways to deal with these pressures. I’m not saying I never cheat. I am a human. I just learned that it’s not worth going off my keto diet for the week or so of inflammation that follows.
To keep myself on track, I usually have two or three bites (or dishes to pass, depending on the type of party). This way I know for sure that I have food that I can eat safely. At the party, I put my “safe foods” on my plate, but I could also eat something else that I’m pretty sure is low carb. Good options include slices of cheese, olives, salad, meat (be aware of any sauces) or simple vegetables. That way I feel like I have a plate full of goodies, just like everyone else at the party.
When I’m nervous, and it’s usually due to my completely introverted personality, I can nibble away the tension with foods that aren’t a problem for me.

I also don’t tell people that I eat low carb. I find that if I don’t tell people I’m low carb, people don’t pay attention to what’s on my plate. If people know, they’ll watch what I eat and comment.
The hardest problem I find is the person being personally offended if you don’t eat the food they brought. I don’t want to hurt anyone’s feelings! I still haven’t found a good way to handle this. Sometimes I just tell them their food looks delicious, but I’m completely stuffed. If I run into them at the start of the party and I have a plate full of food, I just say I’ll look at it later.
While I am someone who is always focused on food (after all, I have a food blog). I remind myself that the real point of a party is fun. I embrace the moment and engage in conversation and fun.

With the holidays just around the corner, I always find myself trying to prepare the best possible menu for each individual event. There are so many foods that hold nostalgic value or have become classic staples, and it’s just so hard to fit into each of my favorite dishes. For one year, I actually had a second Thanksgiving to eat the other dishes that weren’t with the actual holiday meal. I’m not sure if I should openly admit that, but I think it reinforces my neurotic tendencies about food.
Healthy Holiday Eating And Low Carb Appetizer Recipes
Growing up, my family had a fairly defined holiday meal appetizer offering. For Thanksgiving, it was normally cheese, crackers, a few sausages, and possibly a vegetarian plate of dipping sauce. For Christmas: shrimp cocktail and smoked fish. No idea who made these decisions, but year after year that seemed to pop up. No variation!
This Mini Keto Brie Bite recipe was born out of my need to change it up. This low-carb and keto-friendly recipe meets my eating habits, but also appeals to other diners, because there’s something about melted brie that makes people seem to forget they’re not eating real puff pastry. I chose to give you two different topping choices here: Cranberry Walnut or Caramelized Onion and Mushroom. Why? Well, I love those combinations, and I think it’s kitschy and fun to have both a sweet and a savory option. And, let’s face it, the holidays are mostly about me and what I want to eat since I’m the one wielding the carving knife.
Double the recipe for the topping of your choice if you don’t want half and half. If you want one consistent flavor, just double the recipe. I designed this recipe so that you can use about half of each flavor. Variety is the spice of life, they say. However, my husband likes the cranberry more, and I like the mushroom/onion, so it works out for us.
Pre-bake your keto puff pastry. Since these are mini bites, the dough shell will bake fairly quickly, but I found I was happier with the overall consistency of the “pastry” when I pre-baked it. If you put cheese on top of what is essentially a cheese-based dough, you won’t get a clear brie layer. I also found that the shell wasn’t as crispy when I tried it without pre-baking. Six minutes in the oven was perfect. I took out the muffin tin, topped with a piece of brie, and let the cheese melt for about three minutes before taking it out and putting the final topping on it.
Sheet Pan Loaded Bell Pepper Nachos
Mise en place, “Everything in its place”. Since the keto dough dish doesn’t need to sit in the oven for long, I find putting this recipe together much smoother if I cut my brie and make toppings prior to baking. These snacks are best served warm, so an efficient conveyor belt makes this possible.
Do not reheat in the microwave. The dough will be moist. Bah. I pop these little keto brie bites back in a 350 degree oven on a baking sheet for a few minutes to bring everything back to life.

Combine all listed ingredients in a medium saucepan over medium heat. Cook the cranberries in about 3-5 minutes with a potato masher until a thick sauce. Set aside to cool.
Low Carb Appetizers (you Need To Make!)
Melt 1 tablespoon butter in a medium skillet over low heat. Add onions and shallots and cook until softened and browned, about 25 minutes. Be sure to stir occasionally. Remove onions. Increase heat to medium, melt remaining 1 tablespoon butter. Add mushrooms and cook for 1-2 minutes. Add wine to deglaze pan and boil off remaining liquid. Return the onions to the pan and add fresh thyme leaves. Remove from heat. Put aside.
Once the fillings are ready, make your dough by combining butter, cream cheese, and mozzarella in a large heatproof mixing bowl. Microwave on high until melted, about 2 minutes. Mix well, then add the egg and fold in with a spatula to combine as much as possible. Add flour, baking powder and salt. Mix to combine – You may need to use your hands! Knead the dough to thoroughly incorporate the flour into the cheese. Lay out a large piece of parchment. Oil a little.
